Ingredients:

  • 6 oz bacon (chopped)
  • 1 lb Italian Sausage (The “Hot” variety)
  • 1 medium head garlic (10 large cloves, peeled and minced or pressed)
  • 1 medium onion (finely diced)
  • 6 cups chicken broth/stock ((48 oz))
  • 4 cups water ((32 oz))
  • 5 medium russet potatoes (peeled and chopped into 1/4″ thick pieces)
  • 1 kale bundle (leaves stripped and chopped (6 cups))
  • 1 cup whipping cream
  • Salt and black pepper to taste
  • Parmesan cheese to serve (optional)

Instruction:

  1. In a large pot or dutch oven (5.5 qt), over medium-high heat, add chopped bacon and sauté until browned (5-7 mins). Remove bacon to a paper-towel lined plate and spoon out excess oil, leaving about 1 Tbsp oil in the pot.
  2. Add Italian sausage, breaking it up with your spatula and sauté until cooked through (5 min). Remove to paper towel lined plate.
  3. Finely dice onion and add to the pot. Saute 5 min or until soft and golden then add minced garlic and saute 1 min.
  4. Add 6 cups broth and 4 cups water, and bring to boil. Add sliced potatoes and cook 13-14 min or until easily pierced with a fork.
  5. When potatoes nearly done, add chopped kale and cooked sausage and bring everything to a light boil.
  6. Stir in 1 cup cream and bring to boil. Season to taste with salt and black pepper then remove from heat. Garnish with bacon and grated parmesan.

Ingredients:

  • 4 strips thick-cut bacon, cut into 1/2-inch pieces
  • 1 pound sweet Italian sausage, casings removed
  • 4 to 5 large russet potatoes (about 2 1/2 pounds), unpeeled and cut into 1/2-inch cubes
  • 3 cloves garlic, minced
  • 1 large white onion, diced
  • Pinch of crushed red pepper flakes
  • Kosher salt and freshly ground black pepper
  • 6 cups chicken broth
  • 6 cups curly kale, stems removed and leaves roughly chopped
  • 3/4 cup heavy cream
  • 1 teaspoon white wine vinegar

Instruction:

  1. Cook the bacon in a large Dutch oven over medium-high heat, stirring occasionally, until crisp, about 6 minutes. Transfer to a paper towel-lined plate with a slotted spoon; set aside to drain. Add the Italian sausage to the drippings and cook, breaking it up with a wooden spoon, until browned and no longer pink, about 6 minutes. Transfer to the paper towel-lined plate to drain.
  2. Add the potatoes, garlic and onion to the drippings and cook, stirring occasionally, until slightly softened, 6 to 8 minutes. Season with the crushed red pepper flakes and salt and pepper. Add the chicken broth, increase the heat to high and bring to a boil. Reduce the heat to medium-low and simmer until the potatoes are tender and cooked through, 12 to 15 minutes.
  3. Add the kale, heavy cream, bacon and sausage and cook over medium heat until the kale is tender, another 5 minutes. Stir in the vinegar just before serving.
