Ingredients:
- 1/2 cup tamari (, can substitute low sodium soy sauce. Note: tamari has more flavor than soy sauce and significantly less sodium. )
- 1/4 cup brown sugar

- 1 1/2 teaspoons fresh ginger (,minced)
- 1 teaspoon garlic (,minced)
- 1 tablespoon honey ((Vegans: use agave nectar or sweetener of choice))
- 1 teaspoon sesame oil
- 3 tablespoons mirin ((see note))
- 1/4 cup water mixed with 3 teaspoons cornstarch
Instruction:
- Combine all ingredients in a small saucepan, bring to a boil, reduce heat and simmer for about 4 minutes. Remove from heat and let cool.
- Store in the fridge for up to a week. Makes about 1 1/4 cups teriyaki sauce.

Ingredients:
- ½ cup low-sodium soy sauce
- 2 Tablespoons rice vinegar
- 1 Tablespoon sesame oil
- 1/4 cup + 1 Tablespoon light brown sugar
- 1 Tablespoon honey
- 3/4 teaspoon ground ginger
- 1 clove garlic (, minced)
- 2 teaspoons cornstarch+ 2 tsp water (, mixed together to make a cornstarch slurry)
- 1/4 teaspoon crushed red pepper flakes
Instruction:
- Make the teriyaki sauce by adding all of the sauce ingredients to a small saucepan over medium heat.
- Bring to a boil, stirring constantly, and boil for about 1 minute. The sauce should be thick enough to coat the back of the spoon.
