Ingredients:

  • 2 cups granulated sugar
  • 1 cup water
  • 1 pound fruits (tangerines, apricots, strawberries, kiwis, etc.)

Instruction:

  1. Wash and dry the fruit. Slice if needed. The fruit must be dry for the candy coat to adhere properly.
  2. Skewer fruit, only add as many pieces as you can dip into the pot.
  3. Add the sugar and water to your pot. Heat over medium heat until the candy thermometer reaches 275 F degrees. Do not stir the mixture. You can check if it’s ready by sticking a wooden skewer in it and then immediately dipping it in the cold water. If it becomes hard and immovable, the sugar is ready.
  4. When the sugar and water mixture has reached the desired temperature turn the temperature down slightly to prevent burning. Dip your fruit skewer into the sugar mixture, gently turn to coat the fruit.
  5. Work quickly and allow excess sugar to drip off before dipping them in a bowl with iced water for a second and removing them.

Ingredients:

  • 1 lb fresh strawberries
  • 2 cups granulated sugar
  • 1 cup water

Instruction:

  1. Rinse and dry 1 pound of fresh strawberries by patting them with a paper towel. You want to remove all moisture on the strawberries or else it will crystallize the sugar in the syrup.
  2. Now place the strawberries on a bamboo skewer. Then prepare a bowl of ice water and set it aside.
  3. Add 2 cups of granulated sugar and 1 cup of water into a saucepan. Then bring the heat to medium-high. Use a candy thermometer to watch the temperature of the sugar. Once the temperature hits 300 degrees Fahrenheit, turn the heat off.
  4. Now quickly but carefully swirl each skewered strawberry into the sugar syrup. Try to keep the stems from the sugar. They look prettier when the stems poke out.
  5. Once the strawberries are coated in the sugar mixture, gently swirl it into the iced water for a few seconds. Then stand the dipped strawberries into a block of styrofoam to let the extra water drip off. Enjoy immediately for best crunch and flavor. After a few hours, the sugar will break down and become sticky. Repeat this with the remaining strawberries.

FAQ

What are tanghulu made of?

Tanghulu (also known as bingtang hulu) is a candied fruit snack originating from China. Traditionally, it uses red hawthorn berries dipped in a sugar syrup and served on a bamboo skewer, and they’re often given to children on Chinese New Year as a symbol of happiness.

Why is my tanghulu sticky and not hard?

A. If your tanghulu is sticky, the most likely problem is too much moisture. The sugar syrup solution must cook to 300 degrees Fahrenheit to reach what is called the hard-crack stage. When it is allowed to boil to the proper temperature, usually about 5-10 minutes, the extra moisture is cooked out.

Why is my tanghulu not hardening?

If your Tanghulu didn’t harden it’s most likely because you didn’t get the sugar mix to the correct temperature. You’ll want to check that your thermometer is reading accurately. Make sure that you are heating it up to the Hard Crack stage. Another reason could be too much moisture on your fruit.

What is tanghulu English?

sugar calabash‘), also called bingtang hulu (冰糖葫芦; 冰糖葫蘆; bīngtáng húlu; ‘rock-sugar calabash’), is a traditional Northern Chinese snack consisting of several rock sugar-coated fruits of Chinese hawthorn (Crataegus pinnatifida) on a bamboo skewer.
