Ingredients:
- 2 cups granulated sugar
- 1 cup water
- 1 lb strawberries or other fruit of choice
Instruction:
- Wash and pat dry strawberries or fruit of choice.
- Arrange fruit on bamboo skewer. I recommend 1-3 pieces per skewer.
- Bring water and sugar mixture to a boil.
- Using candy thermometer, boil sugar water mixture until the temperature reaches 300 degrees Fahrenheit. This will take approximately 5-10 minutes. See Note 1 if you do not have a candy thermometer.
- When sugar water mixture has reached the desired temperature, dip your fruit skewer into the sugar mixture to coat the fruit.
- Place each fruit skewer on your sheet pan, silicone baking sheet or parchment paper. See Note 2 about parchment paper.
- Sugar coating should harden almost immediately. See Note 3 regarding storage.

Ingredients:
- 2 cups granulated sugar

Instruction:
- Wash and dry the fruit. Slice if needed. The fruit must be dry for the candy coat to adhere properly.
- Skewer fruit, only add as many pieces as you can dip into the pot.
- Add the sugar and water to your pot. Heat over medium heat until the candy thermometer reaches 275 F degrees. Do not stir the mixture. You can check if it’s ready by sticking a wooden skewer in it and then immediately dipping it in the cold water. If it becomes hard and immovable, the sugar is ready.
- When the sugar and water mixture has reached the desired temperature turn the temperature down slightly to prevent burning. Dip your fruit skewer into the sugar mixture, gently turn to coat the fruit.
- Work quickly and allow excess sugar to drip off before dipping them in a bowl with iced water for a second and removing them.

Ingredients:
- 1 lb fresh strawberries
- 2 cups granulated sugar
- 1 cup water
Instruction:
- Rinse and dry 1 pound of fresh strawberries by patting them with a paper towel. You want to remove all moisture on the strawberries or else it will crystallize the sugar in the syrup.
- Now place the strawberries on a bamboo skewer. Then prepare a bowl of ice water and set it aside.
- Add 2 cups of granulated sugar and 1 cup of water into a saucepan. Then bring the heat to medium-high. Use a candy thermometer to watch the temperature of the sugar. Once the temperature hits 300 degrees Fahrenheit, turn the heat off.

- Once the strawberries are coated in the sugar mixture, gently swirl it into the iced water for a few seconds. Then stand the dipped strawberries into a block of styrofoam to let the extra water drip off. Enjoy immediately for best crunch and flavor. After a few hours, the sugar will break down and become sticky. Repeat this with the remaining strawberries.
