Ingredients:

  • 2 pounds ground beef (80-85% lean)
  • 1 onion (chopped)
  • 1/2 teaspooon garlic powder
  • 2 tablespoons taco seasoning* (You can use less or more to taste.)
  • 1/4 cup water
  • 12 ounces can corn
  • 1 1/2 cups salsa
  • 5 8 inch flour tortillas
  • 2 cups Mexican blend cheese (grated or shredded )
  • Green onions, tomatoes, lettuce, sour cream, guacamole or black olives make great garnishes.

Instruction:

  1. Preheat oven to 350 degrees. Prepare an 8-inch springform pan by spraying it with nonstick spray.
  2. Fry ground beef with onion in a large skillet on medium-high heat. Cook until there is no pink left in the meat, then drain the excess fat. Add garlic powder, taco seasoning, water, corn, and salsa.
  3. Cook for five minutes.
  4. Place one tortilla in the springform pan. Layer on about 1 cup of the meat mixture. Sprinkle on ½ cup of cheese. Create layers of tortilla, meat mixture, and cheese until you’ve done 4 full layers. Finish with the 5th tortilla topped with the remaining cheese.
  5. Bake at 350 degrees for 20 minutes. Allow pie to cool for about 10 minutes before removing from the springform pan and cutting. You may also serve it directly from the pan.
