So skip the steakhouse and make this delicious meal yourself. This quick and easy family favorite is ready in less than 15 minutes!

After lots of experimentation, I’ve concluded that pan searing with an oven finish yields the best results. Here are my top tips to guarantee restaurant quality and make a perfect t-bone steak every time!

For the perfect medium-rare T-Bone steak, sear in a skillet for 13–15 minutes for a 1-inch steak, and 15–17 minutes for a 1½ inch steak, turning about 1 minute before the halfway point. A meat thermometer should read 130°F. Rest your steaks for 5 minutes before serving, covering lightly with foil.

Ingredients:

  • 1 1/2 pounds bone-in T-bone or porterhouse steak, 1 1/2 to 2 inches thick (see Cook’s Note)
  • Kosher salt and freshly ground black pepper
  • 1 tablespoon canola oil

Instruction:

  1. Preheat the oven to 450 degrees F. A half-hour before cooking, remove steak from refrigerator.
  2. Heat a large skillet over high heat. Pat steak dry and season generously with salt and pepper. Add oil to hot skillet and when it begins to smoke add steak. Reduce heat slightly and cook steak until browned, about 4 minutes on each side. Transfer skillet to the oven. Roast until an instant-read thermometer inserted sideways into the steak registers 120 degrees F for medium-rare, about 6 to 8 minutes. Transfer steak to a cutting board and let it rest for 10 minutes. Cut steak from the bone and carve meat across the grain.

Ingredients:

  • 1 1/2 pounds T-bone steak (about 1-inch (2.5 cm) thick*)
  • 2 tablespoons olive oil**
  • 1 teaspoon coarse salt (or to taste)
  • 1 teaspoon black pepper (freshly ground, or to taste)
  • 2 cloves garlic (minced (2 teaspoons))
  • 1 tablespoon unsalted butter
  • fresh rosemary (optional)

Instruction:

  1. Remove the steak from refrigerator 30-60 minutes before cooking, so they can reach room temperature for even cooking.
  2. Position the oven rack in the middle and preheat oven to 425°F (218°C).
  3. Place a large cast-iron skillet over high heat and allow to heat for 5 minutes until very hot. (You can also place in the preheated oven for 15 minutes.)
  4. Remove any bits of bone and pat dry the steak with paper towels to remove excess moisture that could interfere with searing.
  5. Rub on all sides with 1 tablespoon of olive oil.
  6. Season both sides with salt and pepper.
  7. Add the remaining 1 tablespoon oil to the pan and swirl to coat.
  8. Carefully place the steak in the pan using kitchen tongs, laying them away from you to avoid splatter.
  9. Sear the first side for 2 minutes.
  10. Flip using kitchen tongs and sear the other side for 2 minutes.
  11. Add garlic, butter and rosemary and then immediately transfer the pan to the oven.
  12. Bake for 2-3 minutes without flipping for medium-rare steaks (130°F/54°C), checking doneness by inserting an instant-read meat thermometer (see recipe notes for other donenesses***).
  13. Remove steak to a plate or cutting board covered with aluminum foil to rest for 5 minutes so the juices can retreat back into the meat.
  14. To serve, cut the meat away from the bone and slice across the grain into strips.

Ingredients:

  • 2 T bone steaks (2-3″ thick steaks, about 14-16oz)
  • 2 tbsp steak seasoning (1 tbsp per steak, any bbq rub or steak blend)
  • 1 tbsp olive oil
  • 1 tbsp butter (1/2 tbsp per steak)
  • ½ tbsp parsley (chopped flat leaf Italian variety (optional))
  • ⅛ tsp black pepper (fresh cracked (optional))
  • ⅛ tsp salt (fresh cracked sea salt, kosher salt, etc. (optional))

Instruction:

  1. Set out steak on a cutting board. While preparing ingredients for the steak (about 15 minutes before cooking this t bone steak recipe), remove steak from the fridge. This will help bring it closer to room temperature.
  2. Preheat the oven to 400 degrees F.
  3. Add seasonings for t-bones. Pat t bone steaks dry with a paper towel and season them all over (don’t forget the sides!) with steak rub or steak seasonings of your choice.
  4. Prep a hot, oiled skillet. Add a large cast iron skillet to a burner on medium-high heat. Add olive oil. Once you have a nice, hot skillet (it will slightly start to smoke – turn on the oven fan for this recipe!), then you’re ready to add the t-bone steaks to the hot oil (stand back!).
  5. Sear. Place both T-bone steaks in the cast iron pan and sear both sides for 2 minutes on each large, flat side. Next, sear the edges, what my husband calls the “fat sides” for 30 seconds. This is just to brown them with a little pan seared crust.
  6. Cook t bone in oven. After the sear, move the cast iron pan into the preheated oven and cook for 5-7 minutes, flipping once halfway through until the internal temperature is about 5-10 degrees below your desired temperature. (In the Sip Bite Go video demonstration, we removed the steaks from the oven when they reached 135 degrees F for med-rare to medium t bone steaks.)
  7. Rest t bone steaks. Remove cooked steaks from the oven and place them on a cutting board to rest for at least 10 minutes. During this time I recommend topping T-Bone steaks with the butter so it melts in and provides a little more flavor and juice.
  8. Garnish steaks and enjoy. Cut the steaks off the bone, then in slices (see my guide to cutting t bone steak), or serve in a full piece. Top them with anything you’d like, such as fresh chopped Italian parsley, fresh cracked salt and pepper, or recommended steak sauces in the notes.
