- 1 batch prepared sushi rice
- 1/2 lb sashimi-grade raw salmon (or desired raw fish of choice)
- 4 oz cream cheese (sliced into strips)
- 1 avocado (sliced)

- 2 cups Japanese short-grain rice (“sushi rice”)
- 2 cups water
- 4-inch square of kombu (optional)
- 1/4 cup unseasoned rice vinegar
- 2 Tbsp sugar
- 2 tsp salt
Instruction:
- Wash the rice with cold water until the water runs clear.
- Place rice, water and kombu in rice cooker and cook the rice according to cooker instructions.
- While the rice is cooking, heat the rice vinegar, sugar, and salt in a small pan over medium heat until the sugar dissolves.
