Ingredients:

  • 5 oz. fresh spinach
  • 1 apple, such as Honeycrisp, thinly sliced
  • 1/3 c. crumbled feta
  • 1/4 red onion, thinly sliced
  • 1/4 c. sliced almonds, toasted
  • 1/3 c. olive oil
  • 3 tbsp. red wine vinegar
  • 1 clove garlic or 1/2 shallot, minced
  • 2 tsp. dijon mustard
  • Kosher salt
  • Freshly ground black pepper

Instruction:

  1. In a medium bowl, whisk together all dressing ingredients until completely incorporated. Season with salt and pepper.
  2. Combine all salad ingredients in a large bowl. Add dressing, toss to combine, and serve immediately.

Ingredients:

  • 10 oz baby spinach
  • 1 cup sliced mini cucumbers
  • ⅔ cup crumbled goat cheese
  • ½ cup sliced red onions
  • ½ cup dried cranberries
  • ½ cup raw walnuts
