Spaghetti Sauce Recipe

Homemade Spaghetti Sauce is so full of flavor and it’s easy to make it in large batches for freezing or canning for easy homemade meals that are prepared ahead.

My family loves it when we make homemade spaghetti sauce. Whenever we make it, it’s always a huge double or triple batch to easily freeze the leftovers. Spaghetti and meatballs is such a family favorite, we almost always have frozen spaghetti sauce and meatballs in the freezer. It makes for a quick and easy weeknight meal, and it’s pretty amazing.

The best spaghetti sauce is made using San Marzano tomatoes. San Marzano is a variety of plum tomatoes. These tomatoes have a stronger flavor and are sweeter and less acidic. You can find canned San Marzano tomatoes at your grocery store. The label should make it very obvious that the tomatoes are this variety.

If you want to make spaghetti sauce completely from scratch using whole tomatoes rather than canned, you’ll need to peel your tomatoes and remove the stems. The easiest way to peel tomatoes is to blanch them in boiling water for 1-2 minutes and then immediately place them into an ice bath. The skins can then be easily removed. We also have a different recipe for Fire Roasted Spaghetti Sauce.

Marinara and spaghetti sauce are slightly different things. Both are tomato-based sauces. Marinara has very simple additional flavorings added to it like garlic, salt, and basil. Spaghetti sauce usually has additional ingredients and spices like onion, fennel, parsley, and oregano.

Ingredients:

  • 1/4 cup extra virgin olive oil (I used Private Reserve Greek extra virgin olive oil)
  • 1 medium yellow onion, grated
  • 3 garlic cloves, finely minced
  • 2 carrots, finely grated (use a food processor or a grater)
  • 28 oz canned crushed tomatoes
  • 1/2 cup water (pasta cooking water, preferred)
  • Kosher salt and black pepper
  • 1 tbsp dried oregano
  • 1 tsp sweet Spanish paprika
  • Pinch red pepper flakes, optional
  • Handful fresh basil, about ½ cup packed, torn
  • Handful fresh parsley, about ½ cup packed, chopped
  • 3/4 lb to 1 lb of cooked pasta of your choice

Instruction:

  1. In a large pan heat the extra virgin olive oil over medium heat until just shimmering. Add the onions, garlic, and finely grated carrots. Cook for about 5 minutes, stirring regularly until softened.
  2. Add the crushed tomatoes and about 1/2 cup water. Add a generous pinch of salt and pepper. Stir in oregano, paprika, crushed pepper flakes, if using. Finally, stir in the fresh basil and parsley.
  3. Bring the sauce to a boil, then turn heat to low. Cover and let simmer for about 15 to 20 minutes. Check partway through, and if you feel the sauce is too thick, you can add a bit more water (preferably some of your pasta cooking water). When sauce is ready, throw in more fresh basil, if you like.
  4. If serving for dinner, add cooked pasta of your choice to the sauce. Mix to combine and let the pasta cook in the sauce over low heat for about 5 minutes.

FAQ

What is the one ingredient that makes spaghetti sauce so much better?

Add butter

Yes, that’s right. Toss in a few tablespoons of butter, and let it melt into the sauce. If you’ve never tried it before, it might seem strange, but a little butter makes tomato sauce rich and smooth, and also balances out too much acidity, which is common in jarred sauces.

How do you make homemade spaghetti sauce taste better?

Everything tastes better with some sautéed garlic and onions. Sauté finely chopped onions and garlic in olive oil until fragrant and golden, then add the sauce and let it simmer so the flavors can meld together.
