Yes, it’s a very easy and fast way to cook sirloin steak. You can also smoke sirloin steak, grill sirloin, and sous vide cook it, too.

A number of oven temperatures will work, including 350, 400, or 425 degrees F, but for this recipe you’ll see the sirloin was cooked at 375 degrees Fahrenheit.

The total cook time for sirloin steak in the oven is only about 15-20 minutes, when you factor in the time searing it beforehand.

It’s like being psychic! The great thing about either of the thermometers above is that I don’t have to take the food out of the oven to know the temperature.

How to use ‘em… What I do is stick the digital thermometer in steak, pork, chicken, whatever… Then put the food in the oven, on the smoker, or grill.

While the meat cooks, it reads the temperature so I know exactly what temp meat is as it’s cooking. Without having to take it out and check. It’s really difficult to overcook food when you know exactly what temp it is inside!

This sirloin steak is seared to golden brown perfection, then topped with garlic and herb butter. A simple, yet totally satisfying way to enjoy steak that’s easy enough for an everyday meal, yet elegant enough for company.

Ingredients:

  • 1 1/4 pounds sirloin steak (I like top sirloin)
  • salt and pepper to taste
  • 1 tablespoon olive oil
  • 4 tablespoons butter (softened)
  • 1/2 teaspoon garlic (minced)
  • 1 tablespoon minced fresh herbs (such as thyme, parsley or chives, plus more for garnish)

Instruction:

  1. Pat each steak dry with a paper towel. Heat a large cast iron skillet or other heavy pan over medium high heat.
  2. Pour the olive oil into the pan. Season the steaks on both sides with salt and pepper.
  3. Place the steaks in a single layer in the pan. Cook for 4-5 minutes per side or until browned. Use a thermometer to cook the steak to your desired level of doneness. I recommend cooking to medium which is 145 degrees F.
  4. While the steak is cooking, place the butter in a bowl along with the garlic, herbs, salt and pepper. Stir to combine.
  5. Let the steaks rest for at least 5 minutes off the heat. Place a dollop of butter on top of each steak. Slice the steak. Garnish with additional fresh herbs if desired, then serve.

  2. Heat a large cast iron skillet to medium high heat. Add olive oil. When olive oil begins to smoke, add seasoned top sirloin steak. Sear for 3 minutes.
  3. Flip steak and sear for 1 minute. Turn off the burner and quickly add the butter, garlic, and rosemary on top of the steak (it will melt in the oven and bring delicious flavor to the top sirloin).
  4. Transfer top sirloin steak to the oven to cook at 375 degrees F for about 5-7 minutes, or until a meat thermometer measures an internal temperature of 135 degrees F for rare steak or closer to 140 or 145 degrees F for medium, or to the temperature you desire.I like using a thermometer that has a probe that goes inside the steak and a cord connecting to a reader outside of the oven so I know exactly what temperature the steak is at all times.   5. Once the steak reaches the desired temperature, transfer to a cutting board to rest for 10 minutes. This is important for the juices to settle.
  6. Serve as is or with your favorite steak sauce.
