Ingredients:

  • 3/4 lb fettuccini pasta
  • 1 lb large raw shrimp (peeled and deveined (21-25 ct))
  • 1 Tbsp olive oil
  • 1/2 onion ((medium), finely chopped)
  • 2 Tbsp unsalted butter
  • 1 garlic clove (minced)
  • 1/3 cup white wine (I used Chardonnay)
  • 2 cups whipping cream
  • 1/3 cup shredded parmesan cheese
  • 1/2 tsp Sea salt (or to taste)
  • 1/4 tsp black pepper (or to taste)
  • 1/4 tsp paprika (or to taste)
  • 1 Tbsp Parsley (finely chopped, to garnish)

Instruction:

  1. Add 3/4 lb pasta to a pot of boiling water with 1 Tbsp salt and cook according to package instructions until al-dente. Drain without rinsing and set aside.
  2. While pasta is cooking, prepare the shrimp and sauce. Season shrimp with 1/2 tsp salt, 1/4 tsp black pepper and 1/4 tsp paprika. Place a large, non-stick pan over medium/high heat and add 1 Tbsp oil. Once oil is hot, add shrimp in a single layer and cook 2 min per side or just until cooked through and no longer translucent. Remove to a separate dish to prevent overcooking.
  3. In the same hot pan, add 2 Tbsp butter with finely chopped onion and sauté until soft and golden (3-5 mins), stirring often. Add minced garlic and sauté another minute until fragrant. Stir in 1/3 cup white wine and boil down until there is only 25% of the liquid left.
  4. Stir in 2 cups cream, bring to a light boil then simmer 2 min. Sprinkle sauce with 1/3 cup parmesan cheese and stir just until creamy and smooth. Let it come just to a simmer without boiling then turn off the heat and season sauce with more salt, pepper and paprika to taste.
  5. Stir in the drained pasta and cooked shrimp, tossing until noodles are well coated in sauce. Serve in warm pasta bowls with a generous sprinkle of finely chopped parsley, more parmesan cheese and some freshly cracked black pepper.

Ingredients:

  • 8 ounces linguine pasta
  • 1 tablespoon olive oil
  • 1 ½ tablespoons butter (divided)
  • 1 pound raw shrimp (buy frozen, peeled, and deveined shrimp)
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 1 tablespoon Old bay seasoning (optional – or smoked paprika or cajun)
  • 1 clove garlic (minced)
  • ½ cup heavy cream ((double cream in the UK))
  • ½ cup parmesan (grated)
  • ¼ cup chopped fresh parsley (chopped)

Instruction:

  1. In a medium-sized saucepan, boil water and salt it. Add your pasta, and cook according to the package instructions until al dente. When the pasta is cooked, reserve 1 cup of the pasta water and drain the pasta.
  2. In a skillet over medium heat, melt 1 tablespoon of the butter, and add olive oil. Cook the shrimp for a minute, then season with salt, pepper, and Old Bay Seasoning or paprika if using.
  3. Continue to cook the shrimp until it’s pink. Do this in batches if you’re worried that you may overcook the shrimp. Remove the shrimp onto a plate and set aside.
  4. In the same pan, melt the remaining butter and add garlic, cook for 30 seconds or until it’s fragrant. Add the heavy cream, and with the spatula deglaze the pan.
  5. Add parmesan, let it melt then loosen the sauce with reserved pasta water and allow to simmer for a minute. Taste the sauce and see if more salt and pepper is needed.
  6. Toss the pasta with the sauce until it’s well coated. Add the shrimp back in to reheat it gently, garnish with freshly chopped parsley and serve.

Lemon Garlic Shrimp Pasta

  • 2 Tbsp Parmesan cheese ((optional, for serving))

Instruction:

  1. Cook the pasta in salted water according to the package instructions, typically minus a minute or two for al dente texture. Drain and set aside.
  2. Heat olive oil and butter in a large skillet or non-stick frying pan over medium-high heat until the butter is melted. Add the minced garlic and optional crushed red pepper flakes and saute for about a minute. Add the shrimp, stir, and continue to saute for 3-4 minutes or until the shrimp are curled up and no longer transparent.
  3. Once the shrimp are cooked, either remove from heat and toss with drained pasta, or add cooked pasta directly from the pot. Heat over medium and stir in about 1/4 cup of the pasta water. Toss to coat thoroughly and stir until heated through. Adjust the amount of pasta water as needed if your pasta seems dry.
  4. Remove from heat and finish with lemon zest, lemon juice, parsley, salt, and pepper. Toss until well coated and serve with optional Parmesan cheese if desired.
