  • 3 lb shiitake mushrooms
  • 1 large onion
  • 3 tbsp oil
  • 1 tbsp salt (adjust to taste)

Ingredients:

  • 1 pound of shiitake mushrooms, sliced or whole
  • 3 tablespoons of unsalted butter (vegan as desired)
  • 1 tablespoon of olive oil
  • Optional splash of white wine*

Instruction:

  1. Start by cleaning the mushrooms. Take a wet paper towel and gently wipe off any dirt from the mushrooms. Refrain from rinsing the mushrooms because they absorb water easily and when cooked they will turn out too chewy. Slice as desired.
  2. In a large skillet over medium heat, heat the butter and olive oil. Once hot, add in the shiitake mushrooms. Let them sit on medium heat and do not touch them for about 3 minutes. This will create some nice caramelization around the edges of the mushrooms. Stir and cook for 2 more minutes.
  3. Pour in the wine, if using, and cook for an additional 2 minutes. Stir in the garlic and parsley and cook for 1 additional minute.

  • 2 tablespoons vegetable oil
  • 1 pound shiitake mushrooms
  • 1 tablespoon sesame oil
  • 2 cloves garlic (minced)
  • 3 tablespoons brown sugar
  • ¼ cup tamari (*or soy sauce)
  • 2 tablespoons rice wine vinegar
  • 2 teaspoons chili garlic sauce (*I used Sriracha (omit if you don’t like spicy food))
  • 1 teaspoon cornstarch (mixed with 1 tablespoon water)

Instruction:

  1. Rinse the mushrooms and wipe them dry. Remove the stems with a paring knife and cut the caps into thick slices.
  2. Heat vegetable oil in a large saute pan. Saute the mushrooms for 5-7 minutes or until they’ve released their juices and are beginning to turn golden. Remove the mushrooms from the pan and set aside. *see note 1.
  3. Heat the sesame oil in the same saute pan. Add the garlic and saute for a further minute. *see note 2.
  4. Add the brown sugar and saute until it begins to caramelized.
  5. Add the tamari, rice wine vinegar, chili garlic sauce and cornstarch. Reduce the heat and allow the sauce to simmer until it thickens (about 2-3 minutes)
  6. Return the mushrooms to the pan and allow them to heat through. Serve with rice, garnished with chopped scallions and sesame seeds.
