Homemade Rice Noodles

Ingredients:

  • 1 cup rice flour
  • 1/3 cup tapioca starch
  • 1 tsp sea salt
  • 1¼ cups water, plus extra if needed.
  • vegetable oil

Instruction:

  1. Step 1.Place rice flour, tapioca starch and salt in a large bowl and whisk to combine. Add ½ cup of water and whisk. Then add another ½ cup water and mix vigorously. Add the final ¼ cup of water and check consistency. It should be the consistency of a thin coconut milk. Rest for 30 minutes.
  2. Step 2.Grease the bottom of two cake tins with vegetable oil. Check the consistency of the rice mixture again and add 1-2 tablespoons of water if needed. Pour in a thin layer of the rice flour mixture (no more than 2mm) into one of the cake tins. Rest the tin over a saucepan of boiling water and cover with a lid. Steam for 3-4 minutes or until just set. Brush the top of the noodle sheet with oil.
  3. Step 3.Remove the tin from the heat and slice the noodle sheet into thick strands. Peel noodles out of the cake tin and place onto a greased tray. Repeat until mixture is finished.
  4. Notes: – These noodles are best made the day you’re using them. Keep them covered in the fridge until ready cook.

Ingredients:

  • 12 oz rice noodles
  • 3 Tbsp vegetable oil
  • 1 lb skinless boneless chicken breasts (sliced into bite-sized strips)
  • Salt and black pepper to taste
  • 1 red bell pepper (or 1/2 red and 1/2 green, sliced)
  • 1 cup broccoli (chopped)
  • 4 oz shiitake or portobello mushroom (sliced)
  • 1 Tbsp fresh ginger (peeled and grated)
  • 1/2 cup chicken broth
  • 2 Tbsp soy sauce (NOT low-sodium*)
  • 2 Tbsp ketchup
  • 1 tsp cornstarch
  • few drizzles of sesame oil

Instruction:

  1. Bring medium size pan of salted water to a boil. Add noodles and cook them on medium heat for about 2 to 4 minutes (depending on thickness of noodles), or until barely tender. Drain and stir in 1 tablespoon of vegetable oil.
  2. In a large wok or skillet, heat 2 tablespoons of vegetable oil over high heat. Season chicken lightly with salt and pepper then place it into the hot skillet and stir-fry about 3 minutes or until just cooked through. Remove from the skillet and set aside.
  3. Add bell peppers, broccoli and mushrooms and saute 1 minute then add ginger to the skillet and stir-fry for another 2 minutes.
  4. In a mixing bowl combine chicken stock, soy sauce, ketchup and cornstarch.
  5. Add chicken, noodles, and broth mixture to the skillet and stir-fry for 3 minutes or until chicken is hot and fully cooked through.
  6. Right before serving drizzle sesame oil and season to taste with salt and pepper as desired. Grab a fork and enjoy!
