  1. 3 (3 oz) packages instant ramen noodles, flavor packets discarded.
  2. ¼ cup low sodium soy sauce.
  3. ¼ cup oyster sauce or hoisin sauce if vegetarian.
  4. 1 tbsp rice vinegar.
  5. 1 tbsp brown sugar, optional.
  6. ½ -1 tsp chili sauce like sambal or sriracha.
  7. ¼ cup water.
  8. 2 tbsp toasted sesame oil.

Ingredients:

  • 200 grams Boneless Chicken Thigh (Cut into cubes)
  • 1 tbsp Minced garlic
  • 1 tbsp vegetable oil
  • 1 medium onion (Sliced)
  • 1 Cup Broccoli Floret
  • 1 medium red bell pepper
  • 1/2 cup Carrot (Cut into Julliens)
  • 3 Blocks Ramen Noodles
  • 1.5 cups Water
  • 1/4 cup low sodium soy sauce
  • 2 tablespoon Oyster Sauce
  • 2 teaspoon Rice Wine vinegar
  • 1/2 tablespoon light brown sugar (or regular sugar)
  • 1 teaspoon Sriracha or Any Red Hot Sauce ((optional))
  • 1/2 teaspoon Sesame Oil
  • Pepper as per taste (For the heat)
  • Chili sauce ((optional) for extra heat)

Instruction:

  1. Start with making the stir-fry sauce. Add all the ingredients mentioned under the sauce, in a jar or a mixing bowl. Keep aside.
  2. Boil Instant ramen noodles as per instructions in the package.(~ 1 minute)
  3. In a pan heat oil. Add minced garlic and sliced Onion. Cook until the onion softens.
  4. Add chicken thigh pieces. Cook for 2-3 minutes on high heat.
  5. Add the stir-fry sauce, followed by bell pepper,broccoli florets and Carrot. Mix everything well. Let it cook till vegetables are crispy (~ minutes)
  6. Just when the sauce starts to thicken up, add water and ramen blocks. let it cook for a couple of minutes.Then flip and break any bigger chunk of ramen. cook for another 2 minutes.
  7. Garnish with spring onion. Serve Immediately.

Ingredients:

  • 2 packets ramen or other instant noodles (, discard seasoning (Note 1))
  • 1 tbsp oil
  • 2 garlic cloves (, minced)
  • 1/2 onion (, sliced)
  • 200g / 7oz chicken thighs, cut into bite size pieces ((Note 2))
  • 1 1/4 cups (315 ml) water, plus more as needed
  • 1 carrot (, cut into matchsticks)
  • 1 small red capsicum / bell pepper (, sliced )
  • 2 cups cabbage (, finely sliced (any type))
  • 1 tbsp dark soy sauce ((Note 3))
  • 1 tbsp Oyster sauce ((or Hoisin, Note 4))
  • 2 tsp Hoisin sauce ((or more Oyster sauce))
  • 1 tbsp Mirin ((Note 5))
  • Finely sliced green onion / shallots

Instruction:

  1. Mix Sauce.
  2. Heat oil in a large skillet over high heat. Add onion and garlic, cook for 1 1/2 minutes until starting to go golden.
  3. Add chicken and cook just until the outside mostly changes from pink to white.
  4. Add Sauce and cook for 1 minute until chicken is quite caramelised.
  5. Add carrot and capsicum, cook for 1 minute (chicken should now be nicely caramelised, see video).
  6. Push chicken and veg to the side to make enough space for the noodles. Add water, place noodles in water.
  7. When the water starts simmering on the edges, leave noodles for 45 seconds then turn.
  8. Leave for 30 seconds, then untangle the noodles, then toss through the chicken and veg.
  9. Add cabbage, toss for 1 minute until sauce reduces to coat the noodles and the noodles are cooked. (Note 6)
  10. Serve immediately, garnished with green onions.
