For those days when all you need is a cookie in the form of a pizza… I give you the Pizookie!
Imagine a mega chocolate chip cookie baked in a cast iron skillet and then served with ice cream on top. Pizza + Cookie = Pizookie.
As a child growing up in Tucson there was a restaurant called Oreganos we used to always go to that claimed to be the inventor of the pizza cookie! Technically they did not call it a Pizookie. BJ’s Restaurant and Bar I believe came up with the name Pizookie and has made it famous through their restaurant chain nation wide.
It’s very simple – cookie dough, a skillet, and some ice cream. But in order to make the best Pizookie I suggest using my fav chocolate chip cookie recipe and voila! Game time.
Take your cookie dough (pre bought or homemade) and transfer to a skillet, spread evenly and bake in the oven at 350 degrees for 22-24 min. (Full directions down below). Top with ice cream and you are set.
It’s best served straight out of the skillet with 4-5 forks for you and your friends so everyone can go to town. You can also eat it on your own, something I may or may not have done on more than one occasion.
Homemade Pizookie Recipe
This easy Pizookie recipe is a homemade chocolate chip cookie, baked in a cast iron skillet until melty in the middle and crispy on the edges. Don’t forget the ice cream!

Ingredients:
- ⅓ cup unsalted butter
- ⅓ cup packed brown sugar
- ¼ cup granulated sugar
- 1 egg yolk
- ½ cup all purpose flour (+ 2 tablespoons, fluffed and levelled)
- 1 teaspoon vanilla
- ¼ teaspoon baking soda
- ¼ teaspoon salt
- ½ cup chocolate chips or chunks
Instruction:
- Preheat oven to 350°F and lightly grease a 6-8″ cast iron skillet.
- In a medium microwave-safe bowl, melt the butter on high in 15 second intervals.
- Add in the sugars and mix with a spoon until combined.
- Add in egg, stirring quickly to incorporate.
- Add flour, vanilla, baking soda, salt and mix with a spoon until completely combined.
- Stir in chocolate and spread evenly into prepared skillet (if you like, throw some extra chocolate on top!).
- Bake for 20-22 minutes* or until edges are crispy and center is just set.
- Let cool slightly before topping with ice cream and serving.
Pizookie Recipe
This easy Pizookie recipe is baked in a cast iron skillet to ooey, gooey chocolate chip cookie perfection. Topped with scoops of vanilla ice cream, of course!

Ingredients:
- 2 sticks (226 grams) unsalted butter
- 1/2 cup (100 grams) granulated sugar
- 1 cup (200 grams) lightly packed light brown sugar
- 2 large eggs, (at room temperature)
- 1 large egg yolk, (at room temperature)
- 2 teaspoons vanilla
- 2 1/2 cups (318 grams) all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon fine sea salt
- 1 1/4 cups (213 grams) semisweet chocolate chips
- 2 ounces (57 grams) semisweet chocolate, (chopped into chunks)
- Vanilla ice cream, (for serving)
Instruction:
- Preheat oven to 325°F.
- In a 10-inch cast iron skillet set over medium heat, melt the butter.
- Remove from heat and pour into a large bowl. Carefully add in the granulated sugar and brown sugar. Whisk to combine. Let cool before whisking in the eggs, egg yolk, and vanilla, until well combined.
- With a rubber spatula, mix in the flour, baking soda, and salt until a soft dough forms. Carefully mix in the chocolate chips and chunks, reserving a few to sprinkle onto the top of the dough. Pour into the same skillet. Dot with chocolate for garnish.
- Bake for about 30 to 40 minutes, or until the edges are golden but the center is still gooey to your preference. Remove from oven and let stand for 5 to 10 minutes before serving with vanilla ice cream.
