Ingredients:

  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 cup creamy full-fat peanut butter ((*see note))
  • 1 large egg
  • 1 teaspoon vanilla

Instruction:

  1. Preheat the oven to 350 degrees F. Line a large baking sheet with parchment paper.
  2. With an electric mixer, blend together all the ingredients until combined, smooth, and thick, 2-3 minutes.
  3. Using a heaping tablespoon cookie scoop, form dough into 1 1/4-inch balls with the palms of your hands.
  4. Transfer to the prepared baking sheet 2 inches apart.
  5. Press down with the back of a fork and then press again from the opposite direction, to form a criss-cross pattern on top.
  6. Bake for about 10 minutes or until the tops are lightly brown and they are about 3 inches wide (all ovens run differently.) They will still be slightly soft if you press on them hot from the oven.
  7. Remove from oven and let cool on the tray for 5 minutes, then transfer to a wire rack to cool completely and firm up.
  8. Enjoy with a tall glass of cold milk!

Why are my 3 ingredient peanut butter cookies falling apart?

Lack of enough liquid or fat will make the dough dry and if you proceed to bake the cookies anyhow it will crumble and fall apart. You can save the recipe by add some oil or milk and make it into a soft dough and proceed with the recipe as usual, you’ll be fine.

Why do homemade peanut butter cookies fall apart?

Potential Reasons For The Marks

Peanut butter cookie dough is denser than a lot of other cookie doughs. Putting the hash marks in the cookie dough balls actually flattens them for more even baking. Without being pressed, the cookies will not cook evenly.
