Ingredients:

  • 2 cups granulated sugar
  • 1 cup light corn syrup
  • 1/2 cup water
  • 1/4 teaspoon salt
  • 1 cup (2 sticks) unsalted butter, sliced
  • 2 1/4 cups unsalted, dry roasted peanuts
  • 1 teaspoon baking soda

Instruction:

  1. Line a large cookie sheet (13×18-inch) with parchment paper and spray with nonstick cooking spray. This stuff is sticky and we want to be extra safe in making sure it will release from the pan.
  2. In a medium, heavy bottomed saucepan, stir together 2 cups granulated sugar, 1 cup light corn syrup, 1/2 cup water and 1/4 teaspoon salt then bring to a boil over medium heat. Hook the candy thermometer to the inside of the saucepan (making sure it is not touching the bottom of the pan or it won’t read an accurate temperature.)
  3. When the sugar comes to a boil (about 6 to 7 minutes) add1 cup (2 sticks) unsalted butter, sliced. Stir to combine.
  4. Let the mixture come back up to a boil until it reaches 280°F. Then stir in2 1/4 cups unsalted, dry roasted peanuts.
  5. Continue boiling the mixture until the candy thermometer reads 300°F (this is considered the hard crack stage.)
  6. Remove from heat and stir in 1 teaspoon baking soda.
  7. Immediately pour the mixture into the prepared cookie sheet and smooth it out.
  8. Let cool completely. Break candy into pieces.
  9. Store in an airtight container.

How to Make Peanut Brittle

FAQ

Why did my peanut brittle not get hard?

Why is my peanut brittle soft? If your peanut brittle is too soft, you didn’t cook it long enough. It’s important to use a candy thermometer and cook the sugar mixture until it reaches the hard crack stage.

What does baking soda do to peanut brittle?

Baking soda creates lots of little air bubbles in the brittle, giving it that perfect crunch that I love. Some peanut brittle recipes use it, some don’t.

Why do you have to use raw peanuts for peanut brittle?

Raw peanuts are a must with this recipe as they have a longer cooking time at high heat. Once the peanuts are added, stir the mixture continuously so no peanuts scorch on the bottom. Bring mixture up to 310°F.

What can I use instead of corn syrup for peanut brittle?

If you need to substitute corn syrup in this peanut brittle recipe, you can substitute cup for cup of:
  1. honey.
  2. light molasses.
  3. agave nectar.
  4. brown rice syrup.
