Summer means meals on the grill, fresh fruit and veggies, and summer cocktails! One of my favorite summer drinks is the peach Bellini. Nothing says summer like the taste of a ripe peach and this cocktail captures that flavor with a fresh, frosty vibe that’s perfect for a hot summer brunch.
A peach Bellini is the signature cocktail created by a bartender in Venice, Italy back sometime between 1934 and 1948. The bartender—Giuseppe Cipriani—named the drink after the painter Giovanni Bellini because the pink of the drink reminded him of the color of one of the saint’s togas in Bellini’s painting. This signature cocktail uses peaches and two different alcohols to create a sweet, soft drink that’s perfect for summer.
There are two types of alcohol in a peach Bellini—prosecco and peach schnapps. Prosecco is a type of sparkling wine that comes from Italy. It has a light and fruity taste with a complex flavor profile that pairs well with this cocktail. Peach schnapps is an intense spirit with a strong fruit flavor. As the name suggests, it tastes like peaches, which makes it the perfect alcohol for making peach Bellinis.
If you don’t have peach schnapps, don’t panic! You can substitute an additional half cup of prosecco in place of peach schnapps. This will decrease the peach flavor a bit, but it’ll still taste great. Alternatively, you can substitute peach vodka in a 1:1 ratio for the schnapps.
Peach Bellini Recipe

Ingredients:
- 1 ripe peach (peeled and diced)
- 8 fresh raspberries
- 1/2 cup water
- 1 bottle chilled prosecco
Instruction:
- Combine diced peach, raspberries and water in a blender pitcher; blend until smooth. Pour puree into a measuring pitcher through a fine sieve to remove seeds. Use a rubber spatula to help the puree move through the sieve. (If possible, cover and chill for an hour or more before assembling cocktails.)
- Pour ~1 1/2 ounces of fruit puree into a flute glass; top with a little Prosecco and gently stir. Once foam has subsided top off with more Prosecco. Serve.
Peach Bellini

Ingredients:
- 1 lb. fresh or frozen sliced peaches, plus more for garnish
- 1/4 c. fresh or frozen strawberries, plus more for garnish
- 1/2 c. peach schnapps
- 1 bottle prosecco or sparkling white wine
Instruction:
- Add the peaches, strawberries, and peach schnapps to the pitcher of a blender. Cover tightly with the lid, and blend at high speed until smooth.
- Divide the peach mixture among six glasses. Garnish each glass with more peaches or strawberries, if you like. Fill each glass half full with prosecco; stir, and add more prosecco, if you like.
Peach Bellini

- Pinch of sugar
- 1 bottle Prosecco, champagne or dry sparkling wine

- Puree peaches, water, lemon juice and sugar in a blender until smooth.
- Fill a champagne flute a quarter full of the puree and then top off with Prosecco, champagne or sparkling wine.
