  • 150 grams noodles ((2 servings))
  • ¼ teaspoon salt ((adjust to taste))
  • 2 to 3 tablespoons cooking oil
  • 1 tablespoon garlic (chopped)

  • 1 small onion (sliced or 3 tbsp spring onions (optional))
  • 3 cups mixed veggies julienned ((cabbage, carrots, bell pepper, green beans))

  • 1 teaspoon rice vinegar ((or 1 tbsp apple cider vinegar or lemon juice))
  • 1 to 2 teaspoon hot sauce ((like chilli sauce or sriracha or any other))

Instruction:

  1. Rinse them well under running cold water. Sprinkle 1 tsp oil and spread it all over the noodles. This prevents them from drying out and becoming lumpy. Set aside.
  2. To a small bowl, add all the sauces you prefer to use along with your choice of vinegar. Keep this near to your stove.
  3. Toss and stir fry for 2 mins. Serve veg noodles hot or warm.

  1. Sauce: Mix cornflour and dark soy until lump free, then add remaining Sauce ingredients.
  2. Season Chicken: Transfer 2 tsp Sauce into bowl with chicken. Toss to coat.
  3. Heat oil in a wok or large heavy based skillet over high heat until smoking.
  4. Add onion and garlic, stir 30 seconds.
  5. Add chicken, stir until white on the outside, still raw inside – 1 minute.
  6. Add carrot and capsicum/bell peppers, cook 2 minutes or until chicken is cooked.
  7. Add noodles, Sauce and water. Use 2 wooden spoons and toss for 30 seconds.
  8. Add green onions, toss for another 1 minute until all the noodles are slick with sauce.
