Cinco de Mayo is almost here, and who doesn’t love nachos? Despite what was served at elementary school cafeteria lunches, nachos do not have to mean stale chips with a bland cheese sauce. Discovering real nachos is revolutionary! Chips, cheese, meat, beans, veggies, yum!
History Lesson: Nachos were created by Ignacio “El Nacho” Anaya in 1943 in Mexico. He created a new snack for the wives of soldiers stationed at Fort Duncan, frying cut tortillas and adding shredded cheese and pickled jalapeños. He called them, “Nacho Especiales.”

Ultimate Nacho Recipe
This is the Ultimate Nacho Recipe! Crispy chips with melted cheese, ground beef, refried beans, and all of your favorite toppings.

Ingredients:
- 16 ounces tortilla chips
- 1 pound ground beef
- 2 tablespoons taco seasoning
- 1/4 cup water
- 15 ounce can refried beans
- 4 cups shredded cheddar cheese
- 1/2 cup sour cream
- 1/2 cup guacamole
- 1/3 cup sliced olives
- 1/2 cup fresh salsa
- 1/3 cup roughly chopped cilantro
- 1/4 cup sliced or pickled jalapenos
- 1/4 cup diced red onion
- 1/4 cup sliced green onion
Instruction:
- Preheat oven to 350 degrees Fahrenheit.
- Heat a large skillet over medium-high heat. Add in ground beef. Use a spoon to break up the meat and cook 8 to 10 minutes until beef is fully cooked through. Drain excess grease. Add in taco seasoning, stir, and cook 60-90 seconds.
- Pour in water and add in refried beans. Stir to combine and cook until heated through. Keep warm.
- Spread chips out onto a baking sheet (or other desired oven-safe baking dish including a 9×13 pan, cast iron skillet, or even a pie plate).
- Sprinkle 2 cups of the cheese over the chips. Dot with the beef and bean mixture. Top with remaining 2 cups of cheese.
- Bake in the 350 degree oven for 5 to 7 minutes, until cheese is fully melted.
- Remove from heat and add additional toppings as desired. Serve warm.

Ingredients:
- 1 Standard Size Bag Of Tortilla Chips
- 1 pound block of cheese such as cheddar (Monterrey Jack or Colby Jack, shredded)
- Optional Topping Such as:
- Seasoned Ground Beef
- Shredded Beef (Pork or Chicken)
- Black beans or pinto beans
- Tomatoes (jalapenos or chilies)
- Corn (black olives, avocados)
- Use as little or as much as you like of toppings (this is a personal choice type of thing!)
Instruction:

Ingredients:
- 1 tbsp. extra-virgin olive oil
- 1 large onion, chopped
- 1 lb. ground beef
- 2 garlic cloves, minced
- 1 tbsp. taco seasoning
- kosher salt
- 1 (15-oz.) can refried beans
- 1/4 c. water
- 1 large bag tortilla chips
- 2 c. shredded cheddar
- 2 c. Shredded Monterey jack
- 1 (15-oz.) can black beans, drained
- 1/2 c. pickled jalapeños
- 1 large tomato, diced
- 1 avocado, diced
- 1/4 c. thinly sliced green onions
- 1/4 c. fresh cilantro leaves (optional)
- Sour cream, for drizzling
- Hot sauce, for drizzling
Instruction:
- Preheat oven to 425º and line a large baking sheet with foil. In a large skillet over medium heat, heat oil. Add onion and cook until soft, 5 minutes, then add ground beef and cook until no longer pink, 6 minutes more. Drain fat.
- Add garlic and taco seasoning and season with salt. Cook until meat is well browned and slightly crispy, 5 minutes more. Add refried beans and water to skillet and stir until combined.
- Add half the tortilla chips and top with beef-bean mixture, half the cheese, half the black beans, and half the pickled jalapeños. Repeat one more layer.
- Bake until cheese is melty, 15 minutes.
- Scatter with tomato, avocado, green onions, and cilantro. Drizzle with sour cream and hot sauce and serve immediately.
