I am very excited about today’s recipe. I have literally made it four times since getting the recipe from my mother-in-law just a few weeks ago. It is hands-down the BEST roast I have EVER eaten!

Seriously, y’all, I am in love with this pot roast and so is the rest of my family!

Like I said, I cannot take credit for creating this Mississippi Pot Roast recipe. It is just one of the many amazingly yummy recipes I have gotten from my mother-in-law over the years. Her homemade spaghetti sauce is one of the most popular recipes on my site, and it’s also one of my personal favorites.

Mississippi Pot Roast is a combination of five simple ingredients that all cook together in your slow cooker. It’s typically made with a chuck roast, which is inexpensive and easy to find at most grocery stores. You can also makes this with other cuts of meat, like I have with Mississippi Pulled Pork.

Cooking a chuck roast over low heat in your crock pot yields incredibly tender results, and the other ingredients added to this roast give it incredible flavor!

Now I have no answer for you as to why this is called a Mississippi Pot Roast. But if all food that comes out of Mississippi tastes as good as this, then I might have to pack my bags and head over there! It’s the south, so it’s automatically an awesome state, I say.

Ingredients:

  • 1 (3-4 pounds) chuck roast
  • 1 packet ranch dressing mix
  • 1 packet au jus gravy mix
  • 1/4 cup butter
  • 4-5 pepperoncini peppers

Instruction:

  1. Place roast in the slow cooker and sprinkle the top with the ranch dressing mix and the au jus mix. Place peppers on top of the mixes, and add the butter.
  2. Cook over low heat for 8 hours. Serve with noodles, rice or mashed potatoes. Enjoy!

Ingredients:

  • 2 tablespoons olive oil ((or vegetable oil))
  • 3 pound chuck roast
  • salt and pepper ((to taste))
  • 1 packet ranch dressing mix
  • 1 packet dry onion soup mix ((or au jus gravy mix))
  • 1/2 cup (1 stick) salted butter
  • 8 peperoncini peppers

Instruction:

  1. Heat up a large skillet on high. Add 2 tablespoons olive oil to hot skillet. You want it really hot here to brown or “sear” the beef quickly. This can also be done in your slow cooker if you have the sear or saute option.
  2. Take a paper towel and make sure you dry both sides of the 3 pound chuck roast. Season with a little bit of salt and pepper. Once the skillet is nice and hot, add the roast. Using tongs, flip the meat over and sear the other side of the roast for another 2-3 minutes.
  3. Transfer meat to slow cooker. Sprinkle 1 packet ranch dressing mix and 1 packet dry onion soup mix over pot roast. Top with 1/2 cup (1 stick) salted butter then place 8 peperoncini peppers on and around the roast.
  4. Cover and cook on low for 8 hours. DO NOT open the lid. It’s tempting but leave it alone!
  5. After it has cooked, take two forks and start shredding the meat. Discard any big fatty pieces. Then serve.

Ingredients:

  • 4 lb. chuck roast (3-5 lbs will work)
  • 1 oz. ranch packet ((can use original packet, dip packet or spicy packet))
  • .87 oz. brown gravy packet ((I use McCormick) See substitutions in notes below)
  • 1/2 cup unsalted butter ((1 stick) can use salted)
  • 10 or more peperoncini peppers
  • 1/4 cup peperoncini juice ((optional but adds more tanginess and flavor))

Instruction:

  1. Add the roast to the slow cooker. You can brown the meat in a skillet on the stovetop if desired but I do not.
  2. Add the ranch packet and brown gravy packet on top of the roast.
  3. Add the stick of butter, peppers and pepper juice.
  4. Cover and cook on LOW for 8-10 hours or HIGH for 6-7 hours. Do not open the lid while the roast cooks.
  5. Shred with two forks right in the slow cooker. Remove any fatty pieces.
