Lasagna Soup made with ground beef, sausage, spinach and three types of cheese! The perfect easy dinner for those cold winter nights!

We are in soup mode at our house and surprisingly, my kids have been loving it. This lasagna soup was a huge hit as was Creamy White Chicken Chili and even Authentic New Orleans Gumbo (not truly a soup but a total winner!).

I guess the only positive thing about cold winter temperatures is that you can continue cooking warm comfort food and soups, like this delicious Lasagna Soup! This soup is seriously yummy! . This tastes just like lasagna, but in soup form, so how could it not be amazing?!

Ingredients:

  • 1/2 pound lean ground beef
  • 1/2 pound ground Italian sausage
  • salt and freshly ground black pepper (, to taste)
  • 1 yellow onion (, chopped)
  • 1 Tablespoon olive oil
  • 3 cloves garlic (, minced)
  • 2 Tablespoons tomato paste
  • 1 recipe homemade marinara sauce ((or 24 ounce marinara sauce))
  • 1/4 teaspoon red pepper flakes
  • 2 teaspoons dried parsley (, chopped (or 2 tsp dried))
  • 1/2 teaspoon dried oregano leaves
  • 1 teaspoons dried basil
  • 7 cups low sodium chicken broth ((or vegetable broth))
  • 9 lasagna noodles (, broken into pieces)
  • 2 cups fresh spinach leaves ((optional),)
  • 10 ounces ricotta cheese ((or cottage cheese))
  • 1 cup shredded mozzarella cheese
  • 1/2 cup freshly grated parmesan cheese
  • fresh basil (, for serving)

Instruction:

  1. In a large pot over medium-high heat, cook ground beef and sausage until browned. Season with salt and pepper as you cook. Drain grease and remove meat from the pot.
  2. In a large pot heat olive oil over medium heat. Toss in diced onion and sauté for about 5 minutes, stirring occasionally. Add in minced garlic and cook for another minute or two.
  3. Stir in tomato paste, marinara sauce, spices, and broth. Return meat to pot.
  4. Bring to boil then add lasagna noodles (broken into 4ths) to potand reduce heat to medium-low and cook, stirring occasionally, until noodlesare tender. Add spinach, if using.
  5. In a small bowl, stir together mozzarella, Parmesan and ricotta cheeses
  6. Ladle the hot soup into bowls, and dollop a scoop of the cheese mixture on top. Garnish with fresh basil

This EASY Lasagna Soup tastes just like lasagna with layers of cheesy noodles smothered in rich marinara infused with garlic, onion and Italian spices all smothered Parmesan, mozzarella and ricotta – drool – and all you have to do is brown your beef, dump in the ingredients and simmer away! You might never go back to traditional lasagna again!

Ingredients:

  • 1 pound lean ground beef (or half Italian sausage)
  • 1 yellow onion, diced
  • 4-5 garlic cloves, minced
  • 1/4 – 1/2 teaspoon red pepper flakes
  • 1 24 oz. jar Prego Traditional Italian Sauce
  • 8-10 cups low sodium chicken broth, divided
  • 1 14 oz. can can crushed tomatoes
  • 2 tablespoons tomato paste
  • 2 teaspoons balsamic vinegar
  • 1 1/2 teaspoons granulated sugar
  • 1 tablespoon dried basil
  • 1 tsp EACH dried parsley, dried oregano, salt
  • 1/2 teaspoon pepper
  • 1 whole bay leaf
  • 10 uncooked lasagna noodles (broken into approx. 1-2 inch pieces*)
  • 1/2 cup heavy cream,optional**
  • shredded mozzarella cheese
  • freshly finely grated Parmesan cheese
  • ricotta cheese

Instruction:

  1. Heat large Dutch oven/large soup pot over medium high heat. Add beef and onion and cook, stirring occasionally until beef is browned. Add garlic and red pepper flakes and saute for 30 seconds. Drain off any excess fat.
  2. Add Prego Sauce, 6 cups chicken broth, crushed tomatoes, tomato paste, balsamic vinegar, sugar, spices, bay leaf and lasagna noodles. Bring to a boil then reduce to a simmer until lasagna noodles are tender, stirring occasionally (approximately 20-30 minutes).
  3. Discard bay leaf and stir in heavy cream (optional) and 2-4 cups chicken broth to reach desired consistency. Garnish individual servings with desired amount of cheeses.
