Gluten Free Pancakes Recipe (The Fluffiest!)

FAQ

What is gluten free pancakes made of?

Gluten free pancakes are one of the few recipes that simply are better made with a super-simple 3-ingredient blend of gluten free flours (superfine white rice flour + potato starch + tapioca starch/flour). And even a wee bit of xanthan gum if you’re willing.

What can you use instead of flour for pancakes?

A few good ones to try are arrowroot, tapioca, or potato starch. Start with 1 tablespoon and add more if you need it. Coconut flour – Since coconut flour is great at absorbing extra liquid, it works well to thicken pancake batter.

Why are my gluten free pancakes rubbery?

Over-mixing pancake batter develops the gluten that will make the pancakes rubbery and tough. For light, fluffy pancakes, you want to mix just until the batter comes together—it’s okay if there are still some lumps of flour.

What is the best wheat flour substitute for pancakes?

Buckwheat Flour

Don’t let the name fool you, it doesn’t contain wheat, it’s made from a seed. This is the “it flour” and my go-to for pancakes, muffins or savory crêpes. Buckwheat flour is packed with fiber and protein and has an assertive flavor and nutty aftertaste.
