Ingredients:
- 8-10 pound (4-5 kg) bone-in fully cooked ham,
- 1/2 cup water
- 1/2 cup unsalted butter, (reduce fat or full fat)
- 1 cup brown sugar
- 1/2 cup honey
- 2 tablespoons Dijon mustard
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground cloves
- 4 cloves garlic, (smashed)
Instruction:
- Preheat the oven to 300°F | 150°C and arrange a rack in the lower third. Remove any plastic packaging or netting from the ham. Trim away the rind and discard. Set the ham aside to rest at room temperature for 1-2 hours.
- Line a baking tray or dish with several sheets of aluminium foil or parchment paper if you prefer (it will make cleanup a lot easier).
- Remove the rind or skin of the ham (refer to steps in post), ensuring you leave the fat on. Using a sharp knife score a 1-inch-wide diamond pattern (don’t cut more than 1/4 inch deep) over the entire ham. Place the ham in the baking tray; pour 1/3 cup of water into the base of the pan and cover the ham with two pieces of foil or parchment paper and bake for 30 minutes.
- Meanwhile, heat the butter in a small pot or saucepan over medium heat until golden browned. Add in the brown sugar, honey, mustard, cinnamon and cloves, stirring to mix together well until the brown sugar has completely dissolved, (about 2 minutes).
- Reduce heat to low and add in the garlic. Allow it to become fragrant, cooking for a further minute or two until the glaze just begins to simmer, then set it aside and let cool to lukewarm (the glaze should be the consistency of room-temperature honey).
- After 30 minutes baking time, carefully remove the ham from the oven and increase the oven temperature to 425°F | 220°C. Discard the foil or parchment paper and pour 1/3 of the glaze all over the ham, brushing in between the cuts to evenly cover. Return to the oven and bake uncovered for 15 minutes.
- Remove from the oven, brush with another third of the glaze and some of the pan juices, and repeat again after 15 minutes more minutes of baking until a dark golden-brown crust has formed, (about 30 minutes total). For added depth of flavour, mix some of the ham pan juices together with the glaze in the pot which will help keep it runny enough for brushing. If your crust is still pink after there suggested baking time, turn on your broiler (or oven grill), and allow it to broil for 2-5 minutes, while keeping an eye on it so it doesn’t burn from the sugar.
- Let the ham rest 10-20 minutes before slicing.

Ingredients:
- 1 (8-11 pounds) bone-in, fully cooked spiral-sliced ham
- Aluminum foil
- Roasting pan
- Thermometer
- 1 cup packed light brown sugar
- 1/2 cup clover honey
- 3 tablespoons cider vinegar
- 2 tablespoons Dijon mustard
- 2 tablespoons yellow mustard
- 1 teaspoon ground cinnamon
- 1/2 tsp EACH onion powder, garlic powder, ground sage, dried parsley, ground nutmeg ground ginger, ground cloves, paprika
- 1/4 tsp EACH pepper, ancho chili powder
Instruction:
- Remove ham from refrigerator and let sit at room temperature for 2 hours.
- Preheat oven to 325 degrees F. Adjust oven rack to lowest position. Pour 2 of cups water into bottom of roasting pan with a roasting rack. (Skip step if you don’t have a roasting rack.)
- Whisk together all of the Brown Sugar Glaze ingredients in a medium saucepan. Bring to a simmer, stirring often, until brown sugar dissolves, about 1-2 minutes. Set aside.
- Roll out 2 large pieces of foil to wrap your ham in, making sure they overlap in the center. Place ham on foil, flat side up, and brush ham all over with approximately 1/3 of the Glaze, including in between slices. Tightly wrap ham with foil and place ham FLAT/FACE SIDE DOWN on the roasting rack (or bottom of pan).
- Bake ham at 325 degrees F until the center registers 100-110 degrees F, (approx. 10-14 minutes per pound). Remove ham from oven and increase oven temperature to 400 degrees F.
- Carefully unwrap ham from foil and discard foil. Spoon juices from the bottom of the pan all over ham. Brush ham all over with 1/3 Glaze (Glaze will have thickened so return to heat to loosen, about 30 seconds).
- Leave ham uncovered to caramelize surface and bake until the ham reaches an internal temperature of around 140 degrees F, approximately 20-30 minutes, spooning juices over ham every 10 minutes.*** Turn oven to broil for more caramelized edges if desired watching closely so they don’t burn.
- Remove ham from oven and spoon juices from bottom of pan/foil again all over ham and brush again with Glaze. Loosely cover with foil. Let rest for 15 minutes then spoon more juices over ham and serve with any remaining Glaze (and my husband loves it with a side of Dijon as well).

Ingredients:
- 1 bone-in spiral sliced half ham
- ¼ cup pineapple juice (see notes)
- 4 Tablespoon Butter (melted)
- 2 Tablespoons Honey
- ½ teaspoon cinnamon
- ½ teaspoon garlic powder
- ½ teaspoon mustard powder
- ½ cup brown sugar
- 1 cup white sugar
- ¼ teaspoon cinnamon
- ¼ teaspoon ground clove
- 1/8 teaspoon paprika
- 1/8 teaspoon nutmeg
- Pinch allspice
- Pinch ground ginger
Instruction:
- Note: These instructions are for a ham that has already been cooked/smoked, which is marked as such on the label.
- Make room for the roasting pan in the oven, you may need to move a rack down one notch. Preheat oven to 275 degrees.
- Pour the pineapple juice on the bottom of the roasting pan and place a roasting rack on top.
- Rinse the ham and pat it dry. Place it on the top of the rack.
- Combine 4 Tablespoons Melted butter, 2 Tablespoons honey, ½ teaspoon cinnamon, ½ teaspoon garlic powder, and ½ teaspoon mustard powder. Brush it over the top of the ham and into the crevices of the slices.
- Cover the pan loosely with foil, making sure to seal the edges around the pan. Bake for 15 minutes per pound of ham. (8 pounds = 2 hours.)
- Combine the glaze ingredients while the ham bakes and set it aside.
- Remove the ham from the oven. Take the foil and place it on a heat-safe surface. Place the rack with the ham on top of the foil. Sprinkle half of the sugar glaze mixture over the top of the ham.
- Transfer the roasting pan (with drippings) to the stove and stir in remaining sugar glaze ingredients. Whisk to combine. Bring it to a boil, then reduce to simmer. Whisk continuously and let it bubble gently until desired thickness is obtained. Remove from heat and transfer the glaze to a heat-safe bowl.
- Place the rack with the ham back in the roasting pan.
- Brush desired amount of glaze over the ham, you don’t have to use it all.
- Broil at 450 for up to 5 minutes to allow the top to caramelize, watch it carefully so it doesn’t burn. (Alternatively, you can use a heating gun to caramelize the top, link in notes.)
- Serve with side dishes of choice, including potato salad, mashed potatoes, twice baked potato casserole, and corn casserole.
