Ingredients:

  • 1 pound breakfast sausage, hot or mild
  • 1/3 cup all-purpose flour
  • 3 to 4 cups whole milk, more to taste
  • 1/2 teaspoon seasoned salt
  • 2 teaspoons freshly ground black pepper, more to taste
  • Biscuits, warmed, for serving

Instruction:

  1. With your finger, tear small pieces of sausage and add them in a single layer to a large heavy skillet. Brown the sausage over medium-high heat until no longer pink. Reduce the heat to medium-low. Sprinkle on half the flour and stir so that the sausage soaks it all up, then add more little by little. Stir it around and cook it for another minute or so, then pour in the milk, stirring constantly.
  2. Cook the gravy, stirring frequently, until it thickens. (This may take a good 10 to 12 minutes.) Sprinkle in the seasoned salt and pepper and continue cooking until very thick and luscious. If it gets too thick too soon, just splash in another 1/2 cup of milk or more if needed. Taste and adjust the seasoning.
  3. Spoon the sausage gravy over warm biscuits and serve immediately!

Ingredients:

  • 1 pound ground spicy pork sausage
  • 1 Tablespoon salted butter
  • 1/3 cup all-purpose flour
  • 3 1/2 cups whole milk
  • 1 teaspoon black pepper
  • salt, (to taste)
  • pinch of red pepper flakes, (optional)

Instruction:

  1. In a large skillet with deep sides, over medium-high heat, add the sausage. Brown and crumble the sausage, stirring occasionally until cooked through and there is no pink left, about 5 minutes. You will not drain the excess grease.
  2. Turn the heat to medium-low. Add the butter to the pan, stir it in to melt.
  3. Add the flour and stir it in so it gets absorbed in the fat and covers the sausage. Cook for 30 seconds, stirring constantly.
  4. Very slowly stream in the milk while stirring constantly. If you pour the milk in too fast it may form lumps. Continue to cook, stirring occasionally until it comes to a simmer and thickens, 3-5 minutes.
  5. Make sure to scrape the bottom and corners of the pan where the flour mixture may get stuck.
  6. Season with the black pepper and pepper flakes, if using, stir it in. Taste and adjust seasoning if necessary. I usually find I need to add a bit more salt.
  7. Serve over your favorite biscuits.

  • 1 pound pork breakfast sausage
  • 1/4 cup all-purpose flour
  • 2 – 2 1/2 cups whole milk
  • fresh cracked black pepper to taste

Instruction:

  1. Cook the sausage in a cast iron or heavy bottom large skillet. Once done cooking, DO NOT drain off the grease. Leave it in the pan and turn the heat down to low.
  2. Sprinkle the flour over the cooked sausage. Stir the flour into the sausage and grease, making a roux. Continue stirring for approximately 2 minutes until the flour is cooked.
  3. Slowly pour in half of the milk, stirring it into the roux and sausage. Turn the heat up to medium and pour the rest of the milk in, stirring to incorporate. Continue to stir until the gravy has thickened. Add in black pepper, taste to adjust salt if needed.
  4. Serve hot over warm biscuits or toast.
