I don’t know if there’s a tastier way to enjoy corn on the cob than Elote corn, smothered in a creamy mayo sauce and topped with chili powder, cheese and lime. This popular Mexican corn recipe was my absolute favorite street food to eat while living in Mexico and makes a great side dish for any BBQ or potluck.

My first experience with authentic Elote was in Puebla, Mexico while living there during a school internship, and it quickly became my favorite snack whenever we were exploring the streets of the city. I just couldn’t get enough Elote and Esquites! This was one Mexican recipe I refused to leave the country without!

The world “elote” means “corn cob” in Spanish, and Mexican Elote is grilled corn on the cob slathered in a mayo cream sauce and garnished with chili powder, cheese and lime. Elotes (and esquites) are as commonly sold from street carts in Mexico as hot dogs are in Manhatten. At least that’s what I experienced while living in Puebla, Mexico!

Mexican street corn, or Elotes Mexicanos, is a traditional Mexican food that’s quick to make and crave-worthy! This elote recipe is a must try for the summer.

Ingredients:

  • 4 corn on the cob (shucked)
  • 1/3 cup sour cream
  • 1/3 cup mayonnaise
  • 1 clove of garlic (crushed)
  • Zest of one lime
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon paprika (can be mild or smoky)
  • 1/4 cup chopped cilantro (not packed)
  • 1/2 cup cotija cheese
  • Lime wedges to serve

Instruction:

  1. In a bowl, mix together the Mexican crema dressing ingredients. Combine 1/3 cup sour cream, 1/3 cup mayonnaise, 1 peeled and crushed garlic clove (or 1 tsp. garlic paste), lime zest from 1 lime, 1/2 teaspoon chili powder, 1/2 teaspoon paprika, and 1/8 cup chopped cilantro (about half of your 1/4 cup).
  2. Grill 4 sweet corn without the husks on a grill, over high heat. Turn regularly for about 10 minutes until they begin to char.
  3. Take the corn off the grill and brush with the crema dressing all over.
  4. Finally, sprinkle 1/2 cup cotija cheese, lime juice from 1 lime, and your remaining cilantro over the top, and serve!

Instruction:

  1. Bring a large pot of salted water to a boil over medium-high heat. Add the ears of corn and cook until tender, about 10 minutes (or cook them in the instant pot).
  2. (Optional step): Brush corn with melted butter and grill corn on medium heat until slightly charred.
  3. Mix the mayonnaise and Mexican crema together and spread a thin layer all around the corn ears.
  4. Sprinkle generously with cotija cheese and then desired amount of chili powder. Serve garnished with cilantro, and with a lime wedge on the side for squeezing on top.
  5. Enjoy immediately.

Ingredients:

  • 4 ears of corn
  • 1/4 cup mayonnaise
  • 1/2 cup cotija cheese
  • 1 lime, quartered
  • Hot sauce (such as Valentina or Tapatio)
  • Chili powder (such as Tajin or ancho chile)
  • Wooden sticks (for taffy apple, corn dogs, etc)

Instruction:

  1. Bring a large pot of water to a boil. Shuck the corn, remove the silk and stalk. Add corn to water, cover and cook for 5 minutes, then remove.
  2. When corn is cool enough to touch but still warm, insert wooden stick into core as a handle.
  3. Brush corn with 1 tablespoon of mayonnaise, sprinkle with 2 tablespoons cheese and squeeze of lime wedge. Add hot sauce and chili powder to taste.
  4. Repeat with remaining ears of corn and serve.
