Ingredients:
- 2 large eggs (room temperature)
- 1 cup granulated sugar
- 1 stick butter (1/2 cup), room temperature
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking powder

Instruction:
- Line a muffin pan with cupcake liners and preheat oven to 350 degrees F. If you are using paper liners, be sure to double them up.

- 2 1/2 cups (325g) all purpose flour
- 2 cups (414g) sugar
- 3 tsp baking powder
- 1 tsp salt
