Ingredients:

  • 2 lb lean Ground Beef ((90/10 or 93/7))
  • 1 large onion (diced)
  • 3 garlic cloves (minced)
  • 2 tsp cumin powder
  • 1 1/2 Tbsp chili powder
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1 1/2 tsp salt (or to taste)
  • 1/2 tsp black pepper
  • 15 oz can black beans (drained and rinsed)
  • 30 oz kidney beans (two 15oz cans, drained and rinsed)
  • 30 oz diced tomatoes (with their juice)
  • 10 oz diced tomatoes and green chilis (with their juice)
  • 30 oz tomato sauce

Instruction:

  1. Place a large skillet over medium-high heat and sauté beef until it releases fat (4-5 minutes), breaking it up with a spatula.
  2. Add onion to the skillet and sauté until tender (4-5 minutes). Add minced garlic and seasonings: cumin, chili powder, garlic powder, dried oregano, salt and pepper. Cook another 30 seconds stirring constantly. Transfer to a 6 Qt slow cooker.
  3. Add remaining ingredients into the slow cooker: rinsed and drained beans, diced tomatoes with their juice, diced tomatoes and green chilis with juice and tomato sauce. Stir to combine and cook on high for 3-4 hours or on low for 6-8 hours. Season to taste if desired and serve warm.

  2. Add in the green pepper, onion, and garlic. Cook for 4 to 5 minutes, until you can no longer see pink. There is no need to cook the beef all the way through. Drain the fat from the skillet.
  3. Add the beef mixture to the slow cooker. Add in the chili powder, cumin, ground chipotle, and ground cayenne pepper. Mix in the Worcestershire sauce, liquid smoke, kidney beans, diced tomatoes, and tomato sauce.
  4. Cook on low for 8 to 10 hours or on high for 4 to 5 hours. Serve with diced red onion, corn chips, sliced jalapenos, shredded cheese, sour cream, and fresh cilantro.

Instruction:

  1. Brown the ground beef and sausage in a large skillet over medium heat until mostly cooked through. A little pink is fine.
  2. Add the diced onion, bell pepper, and garlic and stir to combine. Cooking cooking over medium heat until onion is translucent.
  3. Transfer the beef mixture to a 6 quart crockpot or slow cooker.
  4. Add the kidney and pinto beans.
  5. Top with diced tomatoes, tomato paste, tomato sauce, Worcestershire sauce, beef broth and hot sauce.
  6. Next add the seasonings (chili powder, cumin, paprika, cayenne, salt, pepper and sugar). Stir to combine
  7. Place the lid on the slow cooker and cook on low for 4 to 6 hours or on high for 2 to 3 hours, stirring occasionally.
  8. Serve with desired toppings such as shredded cheese, sour cream, corn chips, tortilla chips, etc.
