Ingredients:

  • 24 ounces frozen corn ((see note 1))
  • 1/2 cup red onion (finely chopped)
  • 1 large roasted poblano pepper (peeled and finely chopped (see note 2))
  • 2 jalapeño peppers (stemmed, seeded, and finely chopped)
  • 1/4 cup fresh cilantro (finely chopped (see note 3))
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon fresh lime juice

Instruction:

  1. Cook corn according to package directions. Spread on a baking sheet to cool.

  • 2 cups corn kernels (fresh, frozen or canned)
  • 1/4 cup chopped red onion

  2. If you are using frozen corn, you can skip the grilling step and heat up the corn according to package directions. If using canned corn, drain and rinse the corn.
  3. Place the corn in a large bowl and add a generous pinch of salt. Let it rest while you prep the other ingredients.
  4. Mix the chopped onion, jalapeño, cilantro, and lime juice (or lemon lime juice combo) together in another bowl. Then, add the mixture to the corn. Taste the salsa and adjust salt as needed.
  5. Let salsa sit at least 30 minutes before serving.
