Ingredients:
- 6 flour tortillas
- 2 cups mexican cheese
- 1 lb chicken breast (cut into small pieces)
- 1 tbsp oil
- 1/2 large bell pepper (diced, any color)
- 1/2 yellow onion (diced)
- 1 tbsp taco seasoning
- 2 tbsp Unsalted Butter
Instruction:
- Preheat a skillet with oil on medium heat. Add in chicken and taco seasoning. Cook for 4 minutes.
- Add in bell pepper and onion, cook for another 5 minutes or until chicken and veggies gain color. Set aside.
- On a clean skillet, add a bit of butter and place a tortilla on top. On half of the tortilla add cheese, the chicken mixture, and cover with more cheese. Fold the tortilla over to close.
- Once the tortilla is golden, flip it over and cook for a few more minutes until that side is golden also. Make sure the cheese has melted. Repeat the same steps with the rest of quesadillas.
- Serve while the quesadillas are still warm!

Instruction:
- Whisk together mayo, taco seasoning, garlic salt, and hot sauce. NOTE: You can use whatever hot sauce you prefer. We love to keep around the mild sauce from taco bell, so I always use that plus my husbands favorite, Valentino.
- Spread mixture on one side of tortilla. Sprinkle desired amount of shredded chicken on top, then cheese. Add sauce to a second tortilla and place on top.
- Heat in the microwave for about 20 seconds, then put on the stove, until nice a crisp. If you have sauce left over, use for dipping!

Ingredients:
- 1 pound chicken breasts ((cut into bite sized pieces))
- 1 tablespoon oil
- 1/2 cup diced bell pepper ((any color))

Instruction:
- Cut chicken breasts into small bite size pieces. Heat oil over medium-high heat in a large heavy duty pan. Add the chicken breasts and taco seasoning to the pan. Sautee 4-5 minutes then add the bell pepper, onion, and garlic, sautee another 5 minutes or until the chicken is cooked through. Remove mixture from the pan and set aside.
- To the same pan, add ½ teaspoon oil and a tortilla, top with a handful of shredded cheese, and 1/4th the chicken mixture, then with more cheese. Fold the tortilla and cook on both sides until crispy and golden. Remove from the pan and repeat with remaining tortillas.
- To serve: Slice tortillas in half or thirds and serve with sour-cream, salsa, guacamole or your favorite dipping sauce.
