Ingredients:
- 1 pound of chunky pasta
- 1/4 cup olive oil
- 1 shallot, finely sliced
- 5 cloves garlic, minced
- 24 ounces (2 pints) cherry tomatoes
- 2 teaspoons kosher salt
- 1/2 teaspoon oregano
- 1/2 teaspoon red pepper flakes
- 1/3 cup shredded parmesan
- 1/4 cup chopped basil
Instruction:
- Heat a large pot of salted water to boiling on the stovetop. Cook the pasta according to package directions.
- Meanwhile, heat a large skillet over medium-high heat. When the pan is hot, add the olive oil and allow it to get very hot.
- Add the shallots and the garlic to the pan and cook for 1 minute before adding the cherry tomatoes. Stir the tomatoes to coat them in the oil and then allow them to sauté for 5 to 8 minutes or until most of them have burst.
- Reserve 1/2 cup of pasta water before draining. Drain pasta and add back to the pot.
- Combine the pasta with the reserved water, parmesan, and tomatoes, stirring until the parmesan is melted. Top with the basil and serve.
