Ingredients:
- 4 flour tortillas (medium size)
- 2 cups shredded cheese (see notes on type)
- optional fillings (see notes for ideas)
Instruction:
- Spray a large pan or griddle with olive oil (or coat with 1/2 tablespoon of oil or butter). Heat on medium-high for 2 minutes, then add the tortilla. Warm for 30 seconds, then add the cheese to one half of the tortilla. Fold over the other half and press down with a spatula. *If adding other ingredients to the filling, make sure to add them here before folding the tortilla!
- Cook for 4-5 minutes, flipping halfway through, until the tortilla becomes lightly browned. Use a spatula to press down on the tortilla as it cooks to help the ingredients stick.
- Remove from the pan and let cool for a few minutes before slicing. Serve with your favorite salsa, guacamole, or sour cream.

Ingredients:
- 2 Flour Tortilla
- 1 cup Cheddar Cheese
- 2 tablespoon Butter
- 1 tablespoon Onion
- 1 Green Chili Pepper
- to taste Sour Cream
- to taste Guacamole
Instruction:
- Sprinkle Cheddar Cheese (1 cup) over one of the Flour Tortilla (1), leaving a half-inch around the perimeter uncovered.
- Sprinkle with Green Chili Pepper (1) and Onion (1 tablespoon) and top with the other Flour Tortilla (1).
- Melt half the Butter (1 tablespoon) in a pan on the stove over medium-low heat. Spread around, and place quesadilla onto the pan.
- Add remaining Butter (1 tablespoon) to the top of the tortilla. Let cook for several minutes over low heat. As butter softens, spread over the top tortilla. Once bottom browns and cheese is mostly melted, flip the quesadilla over.
- Let cook until cheese is fully melted, and bottom is nicely browned. Remove from pan, cut, and serve with Sour Cream (to taste) and Guacamole (to taste).

Ingredients:

- 2 tortillas

Instruction:
- First, add half of the butter to a skillet over medium heat. Once the butter has melted, place one tortilla down in skillet.
- Arrange shredded cheese in an even layer. Then add the second tortilla on top.
- Cook for 2 to 3 minutes on the first side. Then carefully flip quesadilla over. Add the second half of butter if needed.
- Cook for another 2 to 3 minutes on the second side. Cheese should be fully melted by this point.
- Finally, remove from pan. Use a pizza cutter to slice quesadilla.
