I have soo many Thanksgiving recipes, but this Broccoli Casserole was one I always looked forward to my Aunt bringing. The cheese crackers on top are the perfect flavor to pair with the creamy sauce and fresh broccoli. Ingredients:

  • 6 cups fresh broccoli florets (about 2 bunches)
  • 10.5 ounce can cream of mushroom soup ((or homemade))
  • 1 cup mayonnaise
  • 2 large eggs
  • 2 Tablespoons dried minced onion
  • 1 cup freshly grated sharp cheddar cheese
  • 1 cup cheese crackers (, crushed)

Instruction:

  1. Bring a large pot of water to boil. Boil broccoli for 2 minutes. Drain well.
  2. In a large mixing bowl combine mushroom soup, mayonnaise, eggs, onions and shredded cheese and mix well.
  3. Pour over broccoli and toss to combine. Pour into greased casserole dish.
  4. Sprinkle crushed cheese crackers on top. Bake at 400 degrees F for 40-45 minutes.

Ingredients:

  • 4 cups chopped broccoli
  • 1 (10 ounce) can of cream of chicken soup
  • 1 cup mayonnaise or miracle whip (we prefer mayo) Could also substitute Greek yogurt or sour cream.
  • 1/4 cup of butter melted (1/2 stick)
  • 2 large eggs, slightly beaten
  • 1/2 medium yellow onion finely chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 1/2 cups extra sharp cheddar cheese
  • 1/2 sleeve of Ritz crackers, crushed

Instruction:

  1. Preheat oven to 350*F
  2. Place broccoli in a steaming basket on stove and steam for 5 minutes or until broccoli is tender to a fork.
  3. Remove broccoli from stove and chop into bite sized pieces. Place into a medium size mixing bowl.
  4. Add to broccoli, soup, mayonnaise, butter, eggs, onion, salt and pepper. Mix well.
  5. Add 3/4 cup of cheese to broccoli mixture and mix well.
  6. Spray a 8×8 square casserole dish with cooking spray.
  7. Pour entire contents into an 8×8″ square baking dish.
  8. Top with remaining 3/4 cup of cheese and Ritz crackers.
  9. Bake for 30 minutes or until cheese is melted and top is golden.

  2. Cook broccoli in microwave, just until crisp tender (about half of the time called for on the package). You don’t want to cook the broccoli until it’s soft because it will continue cooking when you bake the casserole. Place broccoli in colander to drain.
  3. In a small saucepan over very low heat, stir together condensed soup, cheese, and lemon juice, just until cheese melts. Do not let the cheese get too warm, or it can separate resulting in a grainy texture.

  4. Pour in the milk a little at a time and whisk or stir until a thick roux has formed.
  5. Stir in the cream cheese, Dijon, salt and pepper until smooth.
  6. Stir in the cheddar cheese until smooth.
  7. Add the broccoli and stir again so all florets are coated. Transfer to a 9×13 casserole dish or a 3 quart casserole dish.
  8. Crush the crackers to a medium crumb and add the melted butter. Toss to coat as best as possible.
  9. Top the casserole and bake for 15 minutes until top is golden brown and cheese is bubbling. Remove from the oven and allow to rest for about 10 minutes to firm slightly for serving.
