This easy baked cod recipe comes together in just over 20 minutes, but there is a reason it is a big fan favorite! Tender, perfectly flaky cod, tossed in bold Mediterranean spices and baked with a tasty garlic and lemon sauce.

Fish is one of the staples of the Mediterranean diet, so my family tries to eat fish about twice per week.

Luckily, there are so many ways to prepare a tasty fish dinner. Sometimes, I go for a big baked salmon, a hearty fish soup, or something different like a saucy Moroccan fish.

But one of my favorite go-to dinners is this easy lemon baked cod! And it is the #1 fish recipe on my site, for good reason!

Instructions
  1. Preheat oven to 400°F (207°C).
  2. Arrange the cod fillets in baking tray. Drizzle the olive oil onto the fish, follow by lemon juice, salt and cayenne pepper.
  3. Bake the cod in the oven for 10 – 12 minutes, depends on the thickness of the cod. Garnish with parsley and serve immediately.

Ingredients:

  • 1.5 lb Cod fillet pieces, (4-6 pieces)
  • 1/4 cup chopped fresh parsley leaves
  • 5 tbsp fresh lemon juice
  • 5 tbsp extra virgin olive oil
  • 2 tbsp melted butter
  • 5 garlic cloves, (minced)
  • 1/3 cup all-purpose flour
  • 1 tsp ground coriander
  • 3/4 tsp sweet Spanish paprika
  • 3/4 tsp ground cumin
  • 3/4 tsp salt
  • 1/2 tsp black pepper

Instruction:

  1. Preheat oven to 400 degrees F.
  2. Mix together the lemon juice, olive oil, and melted butter in a shallow bowl (do not add the garlic yet). Set aside.
  3. In another shallow bowl, mix the all-purpose flour, spices, salt and pepper. Set next to the lemon sauce.
  4. Pat the fish dry. Dip the fish in the lemon sauce then dip it in the flour mixture. Shake off excess flour. Reserve the lemon sauce for later.
  5. Heat 2 tbsp olive oil in a cast iron skillet (or an oven-safe pan) over medium-high heat (watch the oil to be sure it is shimmering but not smoking). Add the fish and sear on each side to give it some color, but do not fully cook (about 2 minutes on each side). Remove the skillet from heat.
  6. To the remaining lemon sauce, add the minced garlic and mix. Drizzle all over the fish fillets.
  7. Bake in the heated oven until the fish flakes easily with a fork (10 minutes should do it, but begin checking earlier). Remove from the heat and sprinkle chopped parsley. Serve immediately.

  • 1 1/2 pounds cod (4 fillets), patted dry
  • 3/4 teaspoon kosher salt
  • Fresh ground black pepper

  3. In a small bowl, stir together the lemon juice, lemon zest, olive oil, dried oregano, minced shallot, and minced garlic.
  4. Brush a bit of the mixture on the bottom of a baking dish and then place the cod on top. Brush each cod fillet liberally with the olive oil mixture. Sprinkle the paprika evenly between the fillets.
  5. Place the baking dish in the oven and bake for 17 to 20 minutes (depending on the thickness of the fish), until the fish is flaky and the internal temperature is 130 degrees Fahrenheit when measured with a food thermometer. Garnish with chopped parsley and if desired, lemon slices.

Instruction:

Do you flip cod when baking?

At a standard baking temperature of 425 degrees Fahrenheit, you shouldn’t turn your cod over unless you absolutely have to, and even then you should only flip it once. Fish that has been baked may flake apart easily (and if it doesn’t, it may have been overdone).

How long does it take for cod to cook in the oven?

Cod cooks really quick in a 400 degree oven. If your oven is pre-heated it should only take about 10 – 12 minutes depending on the thickness of your fish. For 350 degree oven expect the cod to take 25 – 30 minutes, and for a 375 degree oven expect 13 to 20.

What temp should cod be when baked?

Preheat an oven or grill to 400 degrees. Lightly spritz fish with olive oil, sprinkle with fresh cracked pepper and sea salt. Bake for approx 12 minutes, or to an internal temp of 145 degrees.

How long to cook cod in the oven at 400?
