This old-fashioned Apple Cobbler is one of my FAVORITE fall desserts. It’s made with fresh apples in a cinnamon sauce, with a delicious cake-like topping.
Many apple cobbler recipes are made with a biscuit like topping, I wanted the same old-fashioned cake-like topping that I use in my other recipes! It has a slight crisp on the top and is soft in the center, and pairs so well with the sauce and tender apples in this recipe.
There is a difference between apple crisp and apple cobbler. Just like its name, apple crisp has a crispy crumble topping made with oats. The topping for this apple cobbler is a smooth batter that is poured on top of the apple filling and bakes more cake-like.
Any baking apple will work great! I tend to prefer Granny Smith apples but I also like Gala apples, Honeycrisp, Golden Delicious, or any other tart apple.
Yes, I like to peel the apples for apple cobbler! The skin doesn’t break down during baking and can make for a tougher texture. (But you can leave the skin on if you want, and chop the apples into smaller cubes!) I use my Johnny Apple Peeler for this part because it does the work for me. It PEELS, CORES and SLICES the apple all at once!

Ingredients:
- 6 medium apples ((Granny Smith, Golden Delicious, or other good baking apple), peeled and cut into chunks ¼ inch thick)
- 1 cup water (or apple juice)
- 1/3 cup brown sugar (, packed)
- 1 Tablespoon cornstarch
- 1 Tablespoon lemon juice
- 1/2 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/8 teaspoon salt
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 3/4 cup milk
- 5 Tablespoons butter (, melted)
- ground cinnamon for topping
Instruction:
- Preheat the oven to 350°F and grease a 9×13 inch pan lightly with cooking spray.
- Stir together brown sugar, water, cornstarch, lemon juice, vanilla, cinnamon, nutmeg, and salt together in a saucepan. Stir in apples. Cook over medium heat for 3-5 minutes, stirring.
- Pour mixture into prepared pan.
- In a large bowl mix together the flour, sugar, baking powder, and salt. Stir in the milk and melted butter, just until combined.
- Pour the mixture over the apples in the pan. Sprinkle lightly with cinnamon.
- Bake for about 38-40 minutes or until a toothpick inserted into the topping comes out clean.
- Allow to cool for at least 15 minutes before serving. Serve warm with vanilla ice cream, if desired.
- Cover and store leftovers in the refrigerator for up to 4 days.

- Combine brown sugar, 3 tablespoons flour, cinnamon, cardamom and 1/8 teaspoon salt in large bowl; mix well. Add apples and lemon juice; toss until evenly coated. Spread apples evenly into prepared baking dish.
- Whisk together 3/4 cup flour, 3 tablespoons granulated sugar, baking powder and 1/4 teaspoon salt in large bowl. Cut in butter until mixture resembles coarse crumbs. Add buttermilk; stir until just combined. Drop by large spoonfuls over apples. Sprinkle topping evenly with remaining 1 tablespoon granulated sugar.
- Bake 60-65 minutes or until topping is deep golden brown and filling is bubbling.

- 5 large baking apples (about {2½ lbs), peeled and sliced ¼-inch thick (see note)
- ⅓ cup granulated sugar
- ⅓ cup (packed) dark brown sugar

Instruction:
- Preheat oven to 375°F and set an oven rack in the middle position. Grease an 8-inch square or 2-quart baking dish with butter.
- Make the Apple Filling: In a large bowl, combine the apples, granulated sugar, brown sugar, flour, and cinnamon. Toss until the apples are evenly coated. Transfer the mixture to the prepared baking dish and pat into an even layer. Dot with the 2 tablespoons butter.
- Make the Biscuit Topping: In a medium bowl, whisk together the flour, 6 tablespoons of the sugar, baking powder, baking soda, and salt. Add the cold butter and smoosh with your fingers (or cut in with a pastry cutter) until the mixture resembles coarse crumbs with pea-sized clumps of butter within. Add the buttermilk and stir until just combined and evenly moistened. It will look lumpy; that’s good. Do not overmix.
- Using a large spoon, dollop 8 to 10 spoonfuls of the biscuit batter over the apples, allowing the filling to show through in spots (most of the filling will be covered). Sprinkle the remaining tablespoon of sugar over the batter.
- Bake until the fruit is bubbling and the top is golden, about 45 minutes (keep an eye on it during the last 10 minutes; if it looks like it’s getting too brown, cover it loosely with aluminum foil). Let the cobbler cool for 15 to 20 minutes, then serve with vanilla ice cream, if desired.
- Note: For the best flavor, use a combination of tart and sweet baking apples, such as Granny Smith, Honey Crisp, Gala, Jonagold, Jonathan, and Golden Delicious. (Don’t use all tart or all sweet, or the flavor won’t be balanced. Click here for a guide to different types of apples for baking and cooking.) I typically use 2 Granny Smith, 2 Golden Delicious, and 1 Honeycrisp.

- Make-Ahead Instructions: The cobbler can be made one day ahead and kept, covered with foil, at room temperature. Reheat, covered with foil, in 300°F oven for 25 minutes, then remove the foil and continue reheating for 15 to 20 minutes more, or until warmed through.
