Ingredients:

  • ½ cup brown sugar
  • 1 ½ teaspoons ground cinnamon
  • 2 large eggs (room temperature)
  • ½ cup granulated sugar
  • ½ cup butter (melted)
  • 1 teaspoon vanilla extract
  • 1 ½ cups all purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 2 cups chopped apples (Pink Lady, Gala, Honeycrisp – any apples that are good for baking, peeled and chopped, about 2 apples)

Instruction:

  1. Preheat oven to 350°F. Grease and flour an 8 x 5 inch loaf pan or line with parchment paper. Set aside.
  2. In a small bowl, whisk together brown sugar and cinnamon and set aside.
  3. Whisk eggs and granulated sugar together in a large mixing bowl.
  4. Whisk in melted butter and vanilla extract until thoroughly combined.
  5. Stir in all purpose flour, baking powder, baking soda and salt just until combined. The batter will be very thick. Fold in chopped apples.
  6. Add half of the batter to the prepared loaf pan. Sprinkle about three quarters of the brown sugar mixture on top of the batter.
  7. Spread the remaining batter carefully on top of the brown sugar mixture. Sprinkle remaining brown sugar mixture on top and use a knife or spoon to gently swirl it into the top layer.
  8. Bake for 35 to 45 minutes or until lightly golden on top and an inserted toothpick comes out clean or with just a few moist crumbs. (If bread is browning too quickly, tent with foil for the last 10 to 15 minutes.)
  9. Let bread cool completely before slicing and serving.

Ingredients:

  • 1 large apple (peeled and cored (such as Granny Smith or Honeycrisp))
  • 1½ cups all-purpose flour ((180g))
  • ½ cup granulated sugar (plus more for sprinkling (100g))
  • ½ cup packed light brown sugar ((110g))
  • ¾ teaspoon ground cinnamon
  • ½ teaspoon baking soda
  • ¼ teaspoon baking powder
  • ¼ teaspoon salt
  • ¼ teaspoon grated nutmeg
  • 2 large eggs (beaten)
  • ½ cup unsalted butter (melted (120ml))
  • ½ cup chopped walnuts or pecans (optional (60g))

Instruction:

  1. Preheat the oven to 350°F. Grease an 8×4-inch loaf pan and line with parchment paper allowing excess to hang over the sides of the pan.
  2. Using the largest holes on a cheese grater, grate the apple. Or, chop the apple into small pieces. Set aside.
  3. In a medium bowl, whisk together flour, granulated sugar, brown sugar, cinnamon, baking soda, baking powder, salt, and nutmeg. Stir in the eggs and melted butter until fully combined. (Batter will be thick.)
  4. Stir the apple and nuts (if using) into the batter until evenly combined. Pour into the prepared pan and smooth out the top. Sprinkle with additional granulated sugar, if desired.
  5. Bake for 55 to 65 minutes or until a wooden pick inserted in the center comes out clean. Let cool in the pan on a wire rack for 10 minutes. Remove from pan and let cool for about 30 minutes more. Slice and serve warm. Any leftovers should be tightly wrapped and refrigerated for up to 5 days.
