Ingredients:

  • 3 large eggs
  • 3 cups milk
  • 3 tablespoons unsalted butter (melted, plus more for the pan)
  • 1½ cups all-purpose flour (sifted)
  • 2 teaspoons sugar
  • 1 teaspoon salt
  • fruit syrup, homemade whipped cream

Instruction:

  1. In a medium bowl, beat eggs until well combined.
  2. Add milk, butter, flour, sugar and salt to eggs and mix until smooth.
  3. Heat more butter in a 10-inch nonstick skillet over medium heat, or spray skillet with nonstick cooking spray.
  4. Pour about ¼ cup batter into the pan and tilt the pan in circles until the batter is spread all over in a thin layer. Cook for 1–2 minutes. When the edges are bubbled and browned, it is ready to flip.

  6. Serve immediately with your toppings of choice.

What is a Swedish pancake?

They are very thin pancakes and are most often served folded or rolled with sweet toppings. Swedish pancakes are known for their richness. High in egg and butter content and low in flour, these pancakes are lighter, fluffier and airier than other forms of pancake.

What is Swedish vs German pancake?

The Swedish pancakes are essentially a baked custard, and are very similar to the German pancakes known in America as a Dutch baby. The Swedish version is generally baked in a square or rectangular pan and cut into square slices, while the German version is generally baked in a round skillet.

Why are they called Swedish pancakes?

Swedish pancakes have probably existed in Sweden since ancient times. They were first mentioned in a publication of Olaus Petri 1538. It was not as easy to make pancakes in the olden days as it is today.
