Adapted from J. Kenji López-Alt’s recipe via Serious Eats. To assemble gyros, you’ll need pita bread, tzatziki sauce, thinly sliced onion and chopped tomato.

Ingredients:

  • 1 pound ground lamb (or 85% lean ground beef)
  • 2 teaspoons kosher salt (see recipe note #1)
  • 1/2 teaspoon freshly ground black pepper
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground cumin
  • 1/2 onion (cut into 1-inch chunks)
  • 1 clove garlic (sliced)
  • 3 ounces bacon (cut into 1-inch pieces)

Instruction:

  1. To a medium bowl add lamb, salt, pepper, oregano and cumin. Mix with your hands until thoroughly combined. Cover and refrigerate 1 hour.
  2. Preheat oven to 300˚F.
  3. Add onion and garlic to the bowl of a food processor and pulse several times to mince; scrape down sides with a rubber spatula. Add lamb mixture and bacon pieces; process to a smooth puree, scraping down sides as necessary.
  4. Line a baking sheet with foil. Transfer meat mixture to center. Wet hands and form meat into a rectangle, approximately 8-inches long, 5-inches wide and 1 1/2-inches high.
  5. Bake 30 to 35 minutes until an instant read thermometer reads 155˚F. Remove from oven and let stand 15 minutes before slicing.
  6. Adjust oven rack to highest position and preheat broiler. Line baking sheet with foil.
  7. Transfer loaf to a cutting board and carefully slice crosswise into 1/8-inch thick slices. Arrange slices on prepared baking sheet, leaving a little room between each one. Broil 2 minutes, until slices are hot and edges are crispy. Remove from oven and tent with foil.
  8. Serving Suggestion: Warm pita bread and spread with a thick layer of tzatziki sauce, pile on gyro meat slices and top with thinly sliced onion and chopped tomato.

Ingredients:

  • 1 pound Lean Ground Beef
  • 1 pound ground pork (or ground lamb)
  • 1 Red Onion. chopped (rough chopped)
  • 6 cloves Garlic
  • 2 teaspoons Ground Marjoram
  • 2 teaspoons dried rosemary
  • 2 teaspoons Dried Oregano
  • 2 teaspoons Kosher Salt
  • 2 teaspoons Ground Black Pepper

Instruction:

  1. Place onions, garlic into a large food processor and process until finely chopped but not liquefied.
  2. Add meat and all the seasonings and grind for another 3-5 minutes. Do not skip this step. If you do, it will be like ground beef with some weird seasonings in it. Grind it until it’s a big, huge, sticky mess that you wonder how you will ever clean up.
  3. Since writing this recipe I’ve discovered a faster way to do this, which is to use your stand mixer with the paddle. Paddle the living daylights out of the meat with the spices until it’s a sticky mess. This is a lot easier to clean up than a blender, and the end result is the same. So use whatever you have that works for you.
  4. Put into a foil pan, and smooth out the top, and bake at 350 for 60 mins, or until it reaches an internal temperature of 175-180
  5. Take it out of the oven and drain all the fat.
  6. Cover it with foil and then place something heavy on it to compress it. I put a cast iron skillet on top and then carefully placed 3 cans of beans on top of the skillet to compress it.
  7. Let it rest for 30 mins and then slice into thin slices.
  8. Gyros!

Instruction:

  1. Preheat the oven to 300 degrees F (148 degrees C). Line a 9×5 loaf pan with parchment paper or foil.
  2. In a food processor, puree the garlic and onion, scraping the sides with a spatula as needed, until a smooth paste forms.
  3. Transfer the onion mixture to a kitchen towel, twist the ends, and squeeze to release as much liquid as possible (about 1/2 cup). Discard the liquid and place the dried mixture from the towel back into the food processor.
  4. Add the lamb, beef, herbs, salt, and pepper. Process until the texture is like a paste, about 1-2 minutes, stopping to scrape down the sides as necessary.
  5. Transfer the meat mixture into the lined pan. Press down to compact it as much as possible.
  6. Bake for 45-55 minutes, until international temperature reaches 165 degrees F.
  7. When the meat is done, remove from the oven, drain the fat, then tent with foil and let the meat rest until it reaches 175 degrees F (79 degrees F).
  8. Remove the gyro meatloaf from the pan and cool completely, then refrigerate for 2-3 hours, until cold.
  9. Slice the meatloaf thinly.
  10. Preheat a large nonstick skillet over medium-high heat. (You can use a little oil if you want to.) Working in batches, add the gyro meat in a single layer and pan fry for 2-3 minutes per side, until browned.
