  • 1/3 cup apple cider vinegar
  • 1 pound stemmed turnip greens (see Cook’s Note)

  • 4 cups low-sodium chicken stock (one 32-ounce carton)

Instruction:

  1. Put the ham in a large stockpot over medium heat. Cook until the ham is crispy and the fat is rendered, about 8 minutes. Pour in the apple cider vinegar and scrape the bottom of the pot with a wooden spoon to lift up any brown bits.
  2. Meanwhile, rip the greens into large pieces to make it easier to fit all of them into the stockpot.
  3. Add the greens to the pot and season generously with black pepper. Pour in the chicken stock and stir to combine. Bring the greens to a simmer and cover the pot. Reduce the heat to medium low and cook until the greens are tender and the liquid is reduced by half, about 45 minutes. Remove the lid and continue to cook, stirring occasionally, until the liquid is nearly gone, about 10 minutes more. Serve immediately.

Ingredients:

  • 1 tablespoon unsalted butter
  • 1 cup yellow onions (diced)
  • 1/2 cup red bell pepper (diced)
  • 1 tablespoon garlic (minced)
  • 2 ½ cups chicken broth
  • 1 tablespoon hot sauce
  • 1/4 teaspoon red pepper flakes
  • 1 fully-cook smoked turkey leg (removed from bone and diced)
  • sea salt & cracked black pepper (add as needed )
  • 2.5 pounds turnips greens (washed & cut)
  • 1/2 teaspoon baking soda
  • liquid smoke (4-8 splashes)

Instruction:

  1. Melt butter in a large stock pot.
  2. Add onions and red peppers.
  3. Cook until tender and then add garlic.
  4. Cook garlic until fragrant and golden.
  5. Stir in chicken broth, hot sauce, red pepper flakes, and diced smoked turkey.
  6. Taste broth and season with salt & black pepper. Broth should taste very well seasoned and delicious.
  7. Let broth simmer for 10 minutes.
  8. Add turnips greens to pot and allow them to cook down slightly.
  9. Stir, cover and simmer for 1 hour (stirring occasionally)
  10. Remove lid and taste to adjust seasonings again. (I usually add a bit more salt, black pepper and hot sauce)
  11. Stir in baking soda and liquid smoke. (this will help further lessen the bitterness)
  12. Cover and simmer for an additional 10- 20 minutes or until greens are tender to your liking.
  13. Serve hot.
