The ever so popular TikTok Baked Feta Pasta! It’s a hearty dish made with roasted tomatoes, creamy and lightly tangy baked feta, al dente pasta, and fresh herbs. One of the easiest and tastiest recipes!

I’m wayyyy behind on this one but my brother has kept telling my how amazingly delicious baked feta pasta was and now finally, I’ve gotten around to making it. I don’t really do trendy (and don’t even have a TikTok account) but this is a trend I’ll totally get behind!

I never should have waited so long to try it. Like just about everyone else I’m obsessed! And luckily now that things have calmed down with it’s popularity a little you shouldn’t have to deal with any feta shortages.

Baked Feta Pasta

After trying the viral TikTok trend, we came up with our own version of the baked feta pasta. Spoiler: Adding shallots is a game changer.

Ingredients:

  • 2 pt. cherry or grape tomatoes
  • 1 shallot, quartered
  • 3 cloves garlic, smashed
  • 1/2 c. extra-virgin olive oil, divided
  • Kosher salt
  • Pinch crushed red pepper flakes
  • 1 (8-oz.) block feta
  • 3 sprigs fresh thyme
  • 10 oz. pasta
  • Zest of 1 lemon (optional)
  • Fresh basil, for garnish

Instruction:

  1. Preheat oven to 400°. In a large ovenproof skillet or medium baking dish, combine tomatoes, shallot, garlic, and all but 1 tablespoon oil. Season with salt and red pepper flakes and toss to combine.
  2. Place feta into center of tomato mixture and drizzle with remaining 1 tablespoon oil. Scatter thyme sprigs over tomatoes. Bake for 40 to 45 minutes, until tomatoes are bursting and feta is golden on top.
  3. Meanwhile, in a large pot of boiling salted water, cook pasta until al dente according to package directions. Reserve ½ cup pasta water before draining.
  4. To skillet with tomatoes and feta, add cooked pasta, reserved pasta water, and lemon zest (if using) and stir until combined. Garnish with basil.

Ingredients:

  • 1 pound bowtie pasta
  • 1/2 cup extra virgin olive oil, plus more for drizzling
  • 2 (20 to 25-ounce) boxes cherry tomatoes
  • 1 (8-ounce) block feta cheese
  • 4 garlic cloves, finely chopped
  • 2 pinches red pepper flakes
  • 1 handful fresh basil leaves
  • Salt and pepper, to taste

Instruction:

  1. Preheat the oven to 400 degrees Fahrenheit. To a baking dish, add tomatoes, olive oil, and salt; toss to coat.
  2. Place the feta in the center of the dish and drizzle with more olive oil. Sprinkle red pepper flakes on top.
  3. Bake for 30 minutes. Increase the heat to 450 degrees Fahrenheit and bake for 5-10 more minutes, or until the feta has browned and the tomatoes have blistered.
  4. While baking, cook the pasta according to package instructions. Drain the noodles but save some pasta water for the sauce (about 1 cup).
  5. Once cooked, take the baking dish out of the oven and stir in the garlic and basil. The residual heat will warm the garlic and take out its raw edge.
  6. Toss in the pasta. Add pasta water if the sauce is too dry. Season with salt and pepper. Serve and enjoy!

Ingredients:

  • 2 pints (20 oz) grape tomatoes
  • 5 medium garlic cloves, (peeled and halved)
  • 1/2 cup extra-virgin olive oil
  • Salt (and freshly ground black pepper)
  • 7 – 8 oz. block feta cheese ((sheep’s milk variety, such as Murray’s), drained)
  • 10 oz. dry pasta (such as campanelle, rigatoni, rotini, penne, bow tie, or cavatappi)
  • 8 oz. spinach, (roughly chopped (8 packed cups))
  • 1/4 cup thinly sliced fresh basil
  • 2 Tbsp minced fresh parsley
  • 1/4 tsp crushed red pepper flakes, (or more to taste)
  • 1/2 cup reserved pasta water

Instruction:

  1. Preheat oven to 400 degrees.
  2. Add grape tomatoes and garlic to a 3 quart baking dish. Toss with olive oil and a few pinches of salt and pepper. Place feta in the center of tomatoes, turn to coat with oil.
  3. Bake in center of preheated oven for 30 minutes.
  4. Then remove the baking dish, raise oven rack up to upper 1/3 of the oven. Return baking dish to oven and increase oven to 450 degrees. Bake until tomatoes and cheese are starting to brown slightly, about 10 minutes longer.
  5. Meanwhile boil pasta to al dente in salted water (I use 1 Tbsp salt and about 3 or 4 quarts of water), according to time listed on pasta package.
  6. Reserve 1/2 cup pasta water and right before draining pour and submerge spinach in with the pasta (it should wilt almost instantly). Drain pasta and spinach.
  7. Smash the tomatoes, garlic, oil and feta together with the back of a wooden spoon. Toss pasta in with mixture along with basil, parsley and red pepper flakes.
  8. Thin mixture with a few tablespoons of pasta water at a time to reach desired consistency. Season with salt and pepper as needed. Serve warm.
