Russian Dressing is similar to Thousand Island Dressing and is also comparable to the In-N-Out “spread”. It is most well-known as a dressing on a Classic Reuben Sandwich or Corned Beef Sandwich.
Ironically, Homemade Russian Dressing originated in New Hampshire, not Russia, and was invented by a grocer named James E. Colburn. He created it as a spread and sold it to retailers and hotels throughout the United States. He was not Russian, but it is said he liked to use the dressing on a Russian salad, giving it the name “Russian” dressing.

Russian Dressing
Russian dressing and Thousand Island are often confused—both begin with mayonnaise and ketchup or ketchup-style chili sauce. But Russian dressing is on the spicier side.

Ingredients:
- 1 tablespoon finely chopped onion
- 1 cup purchased or homemade mayonnaise
- ¼ cup ketchup-style chili sauce or ketchup
- 4 teaspoons bottled (regular; not packed in beet juice) horseradish, or to taste
- 1 teaspoon hot sauce, preferably Frank’s Red Hot Sauce
- 1 teaspoon Worcestershire sauce
- ¼ teaspoon sweet paprika
- Fine sea salt
Instruction:
- In a mortar and pestle, mash the onion to create a paste, or use a large heavy knife to mince and mash the onion into a paste. Transfer the onion paste to a small bowl and whisk in the mayonnaise, chili sauce, horseradish, hot sauce, Worcestershire sauce, and sweet paprika. Season with fine sea salt, if desired. DO AHEAD: The dressing can be prepared ahead and refrigerated, in an airtight container, up to 2 weeks.

- ½ cup mayonnaise, best quality such as Hellmann’s or Duke’s
- ½ cup sour cream
- ¼ cup plus 2 tablespoons ketchup or chili sauce
- ¼ cup plus 2 tablespoons dill relish

- 1 heaping tablespoon finely minced shallot
Instruction:
- In a medium bowl, whisk together the mayonnaise, sour cream, ketchup (or chili sauce), relish, horseradish, and shallot. Taste and adjust seasoning, if necessary. Cover and refrigerate until ready to serve or up to 4 days.

- Place all ingredients, except chopped pickles, in a blender. Blend until smooth.

- Dressing can be used immediately, but the flavor will improve if refrigerated for at least 10 minutes before using.
