Oh, hi. I’m just over here eating my fourth brownie in a mug this week. Yes, this week. Don’t judge. I’m super late to the brownie in a mug craze, and I’m trying to make up for lost time.

I absolutely love small batch desserts (these Small Batch Vanilla Cupcakes are one of my most popular recipes). I often crave something sweet, yet I don’t want to make a recipe that yields dozens of servings (read: little-to-no self control over here).

For those times that I need something rich, fudgy, and comforting IMMEDIATELY – I turn to this Brownie in a Mug recipe. It is unbelievably easy, and it has me diving into a warm brownie in a matter of minutes. Seriously, LESS THAN 5 MINUTES. Gah!

It took me a while to get this recipe exactly the way I wanted it. There are a lot of Brownie in a Mug recipes floating around the internet, but none of them had everything I wanted. I wanted my brownie to be fudgy, tender, super chocolaty, and it had to be prepared in the actual mug. I did not want to dirty a bunch of dishes to make a single serving brownie. I’m happy to report success! Here’s what I came up with…

Ingredients:

  • 3 tablespoons granulated sugar
  • 3 tablespoons all purpose flour
  • 1 ½ tablespoons unsweetened cocoa powder
  • Pinch salt
  • 2 tablespoons chocolate chips (plus more for topping)
  • 1 ½ tablespoons vegetable oil, melted coconut oil or melted butter
  • 3 tablespoons milk
  • ¼ teaspoon vanilla extract
  • Ice cream, whipped cream, powdered sugar, berries for garnish

Instruction:

  1. Place sugar, flour, cocoa powder and salt in a mug. Use a small whisk or fork, and stir until combined, and free of lumps. Stir in chocolate chips. Add oil, milk and vanilla, stir with a spoon or small rubber spatula until just combined (try not to over mix it).
  2. Sprinkle a few additional chocolate chips over the top and cook in the microwave for about 90 seconds (microwave times may vary). Eat immediately with ice cream, whipped cream, powdered sugar, or berries.

Ingredients:

  • 3 tablespoons unsweetened cocoa powder
  • 3 tablespoons all-purpose flour
  • 3 tablespoons granulated sugar
  • generous pinch of salt
  • 3 tablespoons milk
  • 2½ tablespoons vegetable oil
  • ¼ teaspoon vanilla extract
  • 2 tablespoons chocolate chips (plus more for sprinkling)
  • ice cream (to serve)

Instruction:

  1. Combine cocoa powder, flour, sugar, and salt in a 10- to 12-ounce microwave-safe coffee mug. Using a fork, stir until well combined. Add the milk, oil, and vanilla. Stir just until the dry ingredients are almost combined. Add the chocolate chips, and stir until well combined. Sprinkle a few more chocolate chips on top, if desired.
  2. Place the mug in the microwave and microwave on high power for 1 minute. The brownie should have risen and still appear moist in spots on the top. Continue cooking in 10-second intervals if the batter still looks raw. Let the brownie cool for a few minutes before serving with ice cream.

Fudgy Mug Brownie

A super fudgy brownie made in a mug and cooked in the microwave. This single serving dessert is ready in less than 5 minutes!

Ingredients:

  • 2 1/2 tbsp dutch process cocoa powder
  • 1 1/2 tbsp all purpose flour
  • 2 tbsp granulated white sugar
  • 2 tbsp oil (canola, vegetable or olive oil)
  • 2 tbsp water
  • 1 1/2 tbsp chopped dark chocolate

Instruction:

  1. In an 8 oz microwave-safe mug, add cocoa, flour and sugar. Whisk together with a mini whisk.
  2. Add in oil and water. Whisk briskly until batter is smooth, making sure to break up any cocoa or flour lumps.
  3. Add half the chocolate to the mug and briefly stir into batter. Sprinkle remaining chocolate on top of the batter.
  4. Cook cake for about 40 seconds at full power. (I used a 1000 watt microwave. You may need to adjust time and/or power if you are using a different wattage.) Top of brownie should no longer be wet but may still be a little moist. Allow brownie to cool a few minutes and then eat the brownie while warm.

Ingredients:

  • 1 tbsp unsweetened cocoa powder
  • 2 tsp dutch cocoa, (or additional regular)
  • 3 tbsp spelt,
  • 2 tbsp sugar, (or sub erythritol if desired)
  • scant 1/4 tsp baking powder
  • 1/8 tsp salt
  • 1 tbsp oil or nut butter ((some readers sub applesauce or banana))
  • 3 tbsp milk of choice
  • 1/2 tsp pure vanilla extract

Instruction:

  1. Notes: If you want to remove the cake before eating it, be sure to grease the mug before starting. If you can’t find dutch cocoa, subbing additional regular will still work; it will just have less of a brownie flavor. I haven’t tried subbing applesauce or banana for the fat and therefore can’t vouch for the taste of that substitution.If baking, preheat oven to 350 F. Combine all ingredients in a mug or 1-cup dish (or two 1/2-cup dishes). Either bake around 14 minutes, OR microwave until set. Microwave times will vary depending on wattage and if using one or two dishes – I cooked mine for 1 minute, followed by two 10-second increments.
