Ingredients:
- 1 cup honey
- 2 tablespoons chili flakes
- Optional: 2 teaspoons hot sauce or apple cider vinegar (see notes)
Instruction:
- Add the honey and chili flakes to a small pot or pan over medium heat.
- Gently heat the honey until you see small bubbles forming along the edges of the pan then remove the pan from the heat.
- Let the honey infuse for 5 minutes. If you’re using the hot sauce or vinegar, stir it into the honey now.
- Optional step: strain the honey through a fine-mesh sieve into a clean glass jar.

Instruction:
- Add honey and your choice of chile or pepper flakes to a saucepan. Bring this to a simmer over medium heat, remove from heat and stir in apple cider vinegar. Cool to room temperature and transfer to a glass container straining out peppers if desired.

- 3 tablespoons crushed red pepper flakes or 1 fresh jalapeño pepper, sliced
- 1 to 2 teaspoons apple cider vinegar
Instruction:
- Add the honey and crushed red pepper flakes (or jalapeño slices) to a medium sauté pan or saucepan. Heat over medium heat until the honey very lightly begins to simmer. Give the mixture a quick stir to combine, then remove pan from the heat.
- Let the mixture rest for 10 to 15 minutes so that the flavors can infuse.
- Give the honey a quick taste to test the heat level. If you would like a spicier honey, you’re welcome to add more red pepper flakes (or jalapeño slices) and/or let the mixture continue to infuse for longer.
- Once the honey has reached your desired heat level, strain the honey through a fine mesh strainer into a clean storage jar. Stir in the apple cider vinegar until evenly combined.
