Ingredients:

  • 1 1/2 lbs ground beef (80/20, divided into 8 portions (3oz each))
  • Salt (added to taste)
  • Black Pepper (added to taste)
  • garlic powder (optional, added to taste)
  • 4 slices medium cheddar cheese (we love thick-sliced)
  • 1/3 cup mayonnaise
  • 1 tsp yellow mustard
  • 4 burger buns (we used brioche buns)
  • 2 cups iceberg lettuce (shredded)
  • 1 large tomato (sliced)
  • 1/2 red onion (sliced into thin rings)
  • 2 Dill Pickles (cut into 12 slices)

Instruction:

  1. Divide beef into 8 even portions, about 3 oz each. Loosely Roll them into balls then cover and refrigerate while preparing remaining ingredients. The meat must be cold when it hits the grill.
  2. Butter and toast buns over medium heat until golden on the buttered side.
  3. Scrape under the burger with spatula facing down at a 45˚ angle to get under the caramelized part and flip. Cook another 1 minute. Top half of the patties with sliced cheese and cover cheese with the second patty. Repeat with remaining burgers and transfer them to a platter as they finish cooking.
  4. Place sauce on bottom of bun. Top with 3 pickle slices, shredded lettuce, 2 tomato slices and thin sliced onion. Add double patty and top with bun.

FAQ

What makes it a smash burger?

The basic principle of Smash Burgers is to take a big handful of minced beef, loosely packed lest you’ll end up with a beef-puck, and then slam it down onto a very hot, flat surface (cast iron pans work perfectly). Then – and this part is key – smash the mound of beef as flat as you dare with a spatula.

How do you make a Smashburger?

Build a smashburger by adding some sauce, approximately 1 tablespoon, to the bottom of the burger bun. Add lettuce over the top of the sauce, then add a smashburger, and finally top with sliced red onion and tomato. Continue until all smashburgers are assembled. Serve immediately with fries and a cold drink.

What makes Smashburger burgers different?

Great Burgers Are Key. At Smashburger, our technique — smashing a fresh, never frozen, 100% Certified Angus Beef® hand-packed ball of meat on a hot seasoned grill — results in a delicious burger standing alone in taste, texture, and juiciness.

What cut of meat is best for smash burger?

The best beef to use for a Smashburger is a ground chuck, with a fat content in the 15-20 percent range. The higher fat ratio is best because the fat melts and caramelizes while the burger is cooking.
